Swedish Christmas Cookies: A Recipe To Make Pepparkakor

Christmas is a special time in Scandinavia and Sweden in particular. Tradition and Heritage are extremely important to Swedish culture and there are many traditions which are widely upheld.

In most traditional Swedish homes, the smell of home baked foods and desserts fill the air at Christmas time. The Swedes really love to cook and for many, the holiday season and the Christmas Eve celebration is the highlight of their year.

One recipe, which is very popular in Sweden, is for a cookie called the Pepparkakor.

Pepparkakor, literally translated, means “pepper cookies” but I”ve yet to see a recipe that included any pepper. They are similar to the American gingersnap cookie but they are generally thinner, crisper and smoother in texture.

Many refer to this cookie as a “ginger thin” and they are commonly called “gingernuts” in the United Kingdom.

Besides their great taste, pepparkakor cookies are used as Christmas decorations as well. They are frequently shaped like little men or women, pigs, hearts or goats. If left round, they are decorated with frosting to give them more character.

Using a drinking straw, you can create a small hole in the pepparkakor cookie prior to baking. After the cookie has cooled, tie the cookie to the Christmas tree with a beautiful white or red colored ribbon.

Swedish Christmas Cookies or Pepparkakor
Makes 2-3 dozen cookies (depending on shape/size)

Ingredients:

1/4 cup molasses
3/4 cup white sugar
3/4 cup packed brown sugar
8 ounces butter
2/3 cup water
2 teaspoons ground cinnamon
2 teaspoons ground ginger
1 teaspoon ground cloves
1 egg
1 tablespoon light (or dark) corn syrup
3 1/2 cups all-purpose flour
2 teaspoons baking soda

Preparation:

The dough should be well-chilled before baking. You can either start a day early and chill overnight, or start preparing 1-2 hours before the cookies will be needed.

In a heavy pot, combine the molasses, sugars, spices and water. Turn the heat up and bring the mixture to a boil while stirring frequently.

Add the butter to the mixture (in pads or chunks) and remove the pot from the heat. Continue stirring the mixture until the butter has melted and the mixture is uniform in consistency. Pour the hot mixture into a large mixing bowl.

In another bowl, combine the flour, corn syrup, egg and baking soda and whisk until well-blended. Combine with the hot mixture and stir until the dough has formed.

Place the dough on a lightly floured board and knead for 1-2 minutes. Wrap the dough in waxed paper and chill until the dough is firm (1-2 hours or overnight).

On a lightly floured board, roll the dough out to about 1/8 inch in thickness (the thinner, the crisper) and either cut into shapes or make round cookies about 2 inches in diameter. Put the cookies on a lightly greased cookie sheet.

Preheat the oven to 375 degrees F and bake for 8-10 minutes until they are golden brown.

Remove the cookie sheet from the oven and place them on a wire rack to cool.

Because the buds can only be harvested in the spring season this tea is not so common and fairly expensive.

Oolong tea is fermented more than green tea but less than black. Research has shown that this tea helps the digestive system and is good for metabolism.

Green tea is also not fermented like white tea but is made from more mature leaves so is much more common and affordable. This tea was predominantly drunk in the Orient namely Japan and China, but is gaining new ground in the West as research is showing the beneficial properties of this form of tea. Again it has more antitoxins (flavonoids) and is less of a stimulant. Added to this it has vitamin C and fluoride.

In today’’s world, it seems that almost any topic is open for debate. While I was gathering facts for this article, I was quite surprised to find some of the issues I thought were settled are actually still being openly discussed.

Preparing food to share at the holiday festivities is a common practice in our society. However, you need to be able to travel with the food so that it will remain delicious when you arrive at your destination. Foods can move around causing them not to look as pretty when you arrive. You also don”t want the food to tip over and get all over your vehicle. This can be extremely messy as well as be quite frustrating.

There are some wonderful containers out there that allow you to transport foods for the holidays without too much trouble. They are insulated containers that will keep the foods hot or cold. Many of them come with a covering that zips up around them like a suitcase. They even come with a handle. You should consider placing these items in a box so they won”t have as much room to move around while you travel to your holiday destination.

You do need to be very careful about food spoiling when you transport it for the holidays. You definitely don”t want to get anyone sick due to food poisoning. If it will be hot or you are traveling a long distance avoid foods such as potato salad with mayonnaise that can easily spoil quickly. Be prepared for delays too because the amount of people traveling on the roads over the holidays can result in the food being in your car for hours more than you had originally anticipated.

Make sure you plan ahead to have all the equipment and utensils you will need to safely transport foods for the holidays. You are better off arriving empty handed than with food that has been in compromising conditions during the course of travel.

How to Prepare Excellent Soup

Most good soups require a very long time to prepare. There are, however, a number of things one can do to already prepared soups to make them much better, and there are several ways of combining two or more commercial soups which will make the final product a thing of beauty and, if not a joy forever, at least a joy every time you taste it.

Cheese Soup - Serves 6

This is a rich, thick, full-bodied soup, ideal for luncheon on cold days, or for supper following an afternoon’’s skating or other cold-weather sport. It is also a fine dish to serve after a late party when the host, hostess, and a few favored guests sit down to rest and to a little snack before closing up the affair finally. If you wish to use it as a cream soup preceding a meal rather than as a meal itself, dilute it just before serving with a little hot milk. This soup is not for calorie counters.

3 pints mil
2 cloves garlic
4 tablespoons butter
4 tablespoons flour
4 egg yolks
1/4 cup whipping cream
1 teaspoon salt
1/2 teaspoon black pepper
1 teaspoon ground cumin
2 cups dry white wine
2 cups sharp cheese, grated

Scald the milk and gash the garlic. Melt the butter in the top of a double boiler, stir in the flour with a wooden spoon and blend into a roux, cooking over a low fire for about five minutes, stirring constantly. Gradually add the scalded milk to the roux, blending it well to avoid lumps. Add the garlic. Have the water boiling in the lower half of the double boiler, place the top half over it, and cook covered for twenty minutes, stirring occasionally.

Beat the egg yolks lightly with the cream or mix in a swirl mixer. Remove the garlic. Add salt, pepper, cumin, the white wine, and the grated cheese. Stir constantly until the cheese has melted. Add the egg yolks and cream, and continue to cook and stir for three or four minutes. Serve in soup cups, each garnished with a small sprig of parsley.

French bread, a little dark as to crust, or crusty hot rolls should be served with the soup.

Clam Mongole - Serves 4

This recipe is a variation of and, I think, an improvement on a very well-known soup: Puree Mongole. Recipes for Puree Mongole vary but little, and are based on combining tomato and green pea soups in equal quantities. The use of condensed cream of tomato and cream of pea makes this a quick and easy dish for the harassed chef, or for one who is not. The combination is usually diluted by the addition of water, or water and consomme.

The result is a rich, filling, and pleasant brew which can be served as part of an elaborate meal, or will make, with the addition of a salad, an acceptable light luncheon. Clam Mongole is even better suited to the latter purpose, and is, at the same time, an unusual and appealing soup course for a dinner. The use of milk in the following recipe will give you a thicker and richer blend. You may, of course, control the consistency of the final product by varying the quantity of milk or water.

1 tin condensed cream of tomato soup
1 tin condensed pea soup
1 tin minced clams
1 cup water or milk
4 dashes scotch bonnet

Place the two soups in a saucepan, drain the clams, and add the juice to the soups. Over a low fire and using a wire whisk, stir the mixture until it is smooth. Gradually add the other liquid, stirring all the while. When the soup has reached the consistency you like, add the clams and bring to a boil, but do not let boil. Add the Scotch Bonnet, stir well, and serve at once, very hot. Carr’’s Table Water Biscuits make an ideal accompaniment.
