The Perfect Pub – A Blueprint

On the rare occasion that I”m down the pub with my mates and the conversation runs dry we have a stock conversation topic that never fails to deliver animated controversy. How would we design our perfect pub? Carlsberg have touched upon the basics in their TV advert; beautiful barmaids, comfortable chairs and cold beer are a must. They are the core staples to make a pub great but we are striving for perfection and perfection is achieved in the details.

Bar Staff

A mixture of hot young Swedish girls that talk with a slight accent and friendly Eastern Europeans will be recruited to collect glasses. Martin Clunes and Ricky Gervais will be recruited to pull the pints and will be helped on a part time basis by TVs Bill Bailey. Shaun Slater from Eastenders, Tony Soprano and Evander “the real deal” Holyfield will work the door. The special one Jose Morinho will manage the bar on the owner Peggy Mitchell”s behalf and Stephen Fry will host the weekly pub quiz. In the event of the pub needing some nasty underhand work done Steve Buscemi will be employed.

Building

The building will be a traditional Ye Olde English chocolate box style building. It will preferably be thatched with a log fire for the winter. The beer garden will have a patio heater for every table in the winter and these will be replaced with patio umbrellas in the summer.

The BBQ section of the pub garden will feature a permanent pork spit roast that will serve up crackling and apple sauce as an optional side order to the traditional pork roll with stuffing. The tables in the beer garden will have a slight wobble for that truly authentic touch.

Location

Choosing the right location for the pub was a tricky decision. Early suggestions recommended Melbourne, Australia (on the off chance that the cast of neighbours would become regulars). Suggestions were also made that suggested that it be placed in Thailand, Cape Town, Tokyo, LA, or New York. General consensus swung to Hawaii (on a glorious white sandy beach within sight of, but safe distance from, a volcano that would erupt once every week). Eventually however we opted for placing it 7 minutes” walk from my house. This was regardless of where ”my house” was and would necessitate the use of teleportation technology for the building.

Services

One of the most contentious issues is whether or not to have big screen TVs plastering the walls. Final deliberation settled for a screen free bar except for mini screens in the toilets above the urinals. Wall sized super screens would be pulled down from the ceilings for big sporting events.

The biggest debate was whether or not to include a high end cocktail bar. After much consternation and the sampling of a few tequila daiquiris and a round of long island Ice teas it was eventually decided that it would be a good idea after all this is the modern world and we are modern men. Cocktails must include a cocktail umbrella.

Equipment

Each table will have its own fully stocked mini bar and swivel optic machine. The pub will also have a revolutionary donation payment system that will require the pub goer to make a reasonable donation into a bucket as they leave thus reducing the necessity of carrying pocketfuls of change this will also reduce expenditure on staff that will mean drinks will be cheaper.

The pub will also feature an amusement style grabber machine in the corner. Our version will not drop the prize you have skilfully selected for no reason whatsoever. 90% of the questions the pub quiz machine will ask will be answerable with only 10% requiring an ”educated guess”.

The pub will of course have the conventional weekly quiz. This quiz will however not feature girly celebrities, like that one from desperate Housewives, in the picture round. The bar will also feature a monster ice machine that will provide unlimited ice to the patrons.

Why Cook with Cast Iron Cookware?

I”m a recent fan of cooking with cast iron cookware. My interest started with my frustration with Teflon coated pans and their tendency to lose their nonstick coating over time. I really dislike replacing my pans. And of course some people express concerns about the safety of ingesting tiny particles of Teflon, although there”s so far no definite evidence of health hazards.

While talking with my mother I learned that she was looking at cast iron cookware as an alternative. When properly seasoned it is fairly nonstick, and it can last for generations.

I guess my husband paid attention to my complaints about my nonstick pans. He got me a cast iron pan the following Christmas. I was and still am delighted. I now also have my grandmother”s old cast iron pan. It”s a true delight.

Cast iron cookware can actually make your cooking a bit healthier. It adds a bit of iron to your food. How much depends on the age of the pan and what you”re cooking, but the tests have been done, and they are quite clear. It”s really nice knowing that something good for you is being added just through your choice of pan.

Cast iron heats very evenly. It may take a touch longer, but it”s really not that much of a wait for it to heat up. You can even use it in the oven, which most other pans are not supposed to do.

It”s very affordable. When I price cast iron in comparison to stainless steel pans, the iron ones often come out cheaper.

It”s more nonstick than stainless steel or aluminum pans. Food can still stick, but in my experience it really doesn”t do so all that badly. And if you want a quick way to remove it, I”ve read that filling the pan with water and then heating it to boiling makes it easier to get the food off.

One thing you will always have to do with cast iron is make sure that you dry it completely, or you do risk it rusting. The easiest way to do this is to place it on the stove and turn on the burner until the pan is completely dry. Give it a light coating of vegetable oil, and you”re in good shape.

This bit of extra care is very much so worth it to me. I have pans that I will probably never need to replace, and can be handed down after I am gone. No health worries due to what the pan is made of. All in all I find it to be a very good deal.

Honey is made in one of the world”s most efficient factories – the beehive, by some of the most efficient workers – bees. The colour and flavour of honey differs depending on the bees” sources of nectar. There are 22 common floral varieties of honey. Typically, lighter honeys have milder flavours than the darker honeys. Fructose, glucose and water are the primary components of honey, although they also contain other sugars, trace enzymes, minerals, vitamins and amino acids. It is made up of 80% sugars and 20% water.

Did you know that:
1. European bees were successfully introduced into Tasmania in 1831 and Italian bees arrived in 1884.

2. Australia is a large producer of honey because of its climate and vegetation.

3. Australia”s eucalypts are an excellent source of honey. The honey produced has a unique flavour and density.

4. Most Australian honey comes from eucalypt box, gum, stringy bark and iron bark tree families.

5.Australia exports half of the honey that it produces, particularly to Germany and the UK.

6. Honey is the only food that contains all the essential substances needed to sustain life.

7. A beehive typically makes more than 180kg of honey per year.

8. Each hive has guards to guard the entrance. Bees have a unique smell that identifies them.

Honey has many medicinal properties. Honey speeds up the healing process. It has been used as a topical dressing on wounds for millennia, as microbes cannot live in it. Honey contains nutrients that promote tissue regeneration and stimulate the growth of new capillaries. Honey combats infection by drawing lymph out to the cells and absorbing moisture. Band-aids impregnated with honey can be bought in pharmacies in Australia and New Zealand. It has also been used to treat diseases such as typhoid and pneumonia. However, honey can be dangerous, or even fatal, to a baby below the age of a year as it contains spores that their immune system is not equipped to handle.

Recipe of the Day – Honey Chicken with Cashew

Serving
2 People

Ingredients
1. A piece of Chicken breast
2. 100g of unsalted roasted Cashew Nuts
3. 1 small shallot/onion thinly sliced
4. 2 Tspn of Honey
5. 1 Red Capsicum
6. Some fresh Coriander for garnish
7. Salt & Pepper to taste
8 2 Tspn of Olive oil

Method
1. Wash and dry the chicken breast and cut into small bite size pieces. Marinate this with the honey and pepper, leave to marinate for at least 30 minutes.

2. Deseed the red capsicum and cut into bite size square pieces.

3. Heat up your favourite cooking pan for stir-fried. When it is hot enough, add the olive oil. When this is hot enough add the sliced shallots/onions. Make sure you stir through to make sure they are not burnt.

4. When the shallots/onions are softened to a slight brown colour add the marinated chicken. Continue to stir through to ensure the chicken pieces do not get burnt at any sides. Add salt and further pepper to taste if necessary.

5. Add 1/2 a cup of water or chicken stock and let it simmers to cook through the chicken, add slightly more water if it is needed to cook through your chicken pieces.

6. Once the liquid is almost dried up, add the capsicum and cashew nuts and stir through thoroughly. Continue stirring this for another 5 minutes and dish it up onto a serving plate. Finally garnish this with chopped coriander. Serve it with rice or roti.

Spoon the mixture into paper cases in a muffin pan, and bake for 15 to 25 minutes at approx 350 degrees, or until they are risen and firm to touch.

Leave to cool on a wire rack and then ice with your favorite frosting, or drizzle with jam.

Ingredients: 3 and a half cups of low-salt chicken broth, 1 tbsp olive oil, 3 cloves of garlic-finely sliced, 1 and a half cups of raw Arborio rice, half cup chopped onion and dry white wine each, a quarter tsp each of salt and pepper and 4 cups of trimmed arugula

Method: simmer the broth in a small pan taking care not to bring it to a boil while on low heat. In another pan, warm oil over medium heat then add the garlic, stir-frying it for 3 minutes till lightly browned. Take out the garlic using a slotted spoon and keep it aside. Put in the rice and chopped onions, sauteing for 5 minutes before pouring in the wine then adding the salt and pepper and cooking till the wine is almost soaked up (approx. 1 minute). Stir gently, add warm broth a little at a time till absorbed; add last 1/2 cup (may take about 20 minutes). Take off the heat, adding in the garlic and arugula trimmings.

3. A Tangy Ginger Lime Sweet Potatoes Recipe
Ingredients: a third cup all-purpose flour, 10 cups sweet potato, finely peeled and sliced, a quarter cup of butter, one third cup of light brown sugar, 1 tbsp lime rind, 2 tbsp fresh lime juice, 1 tbsp each of shredded orange rind and ginger; also called for are 1 tsp each of low-salt soy sauce and salt, a quarter tsp of black pepper and cooking spray.

Method: heat the oven to 425 degrees F while you prepare the rest of the ingredients: with a light hand, spoon in the flour into a measuring cup, level off excess with knife; mix this and the potato into a large bowl and toss gently. After this, melt the butter into a saucepan over a slow fire, adding in the sugar and remaining ingredients, stirring gently to cook for a few minutes till the sugar melts. Pour this over the pre-prepared potato mixture and mixed well before spooning it in to a low 2-quart baking dish, pre-coated with cooking spray. Proceed to cover and oven-bake this dish at 425 degrees F for close to an hour (or till done) and let it stand for 10 minutes before serving!
