2 cups of chopped fresh basil
1/8 cup of chopped fresh thyme
1/4 cup of olive oil
2 tablespoons of balsamic vinegar

Preparations
First of all rub the peeled clove of garlic from inside of wooden salad bowl. After that chop the bread into small size pieces.

Mix bread, tomato, tomato, cucumber red onions, garlic, basil and thyme in the prepared bowl. Finally add oil and vinegar for lightly coating. Toss and serve the Mid- summer Italian bread salad

It isn”t a surprise then, that hearty meals would constitute a very integral part of their daily routine. As part of their culture, every Cuban is expected to deeply relish and take pride in the succulent variety, quantity and seasoning of their food.

Cuban cuisine has been highly influenced by Spanish, Chinese, Portuguese, Arabic and African cultures. In times of festivity, Cubans would have three exciting terms for you–Roast Pig, Congri and Beer. The traditional roast is made by marinating a pig with salt, garlic and sour orange juice, and slowly roasting it above a charcoal fire.

”Congri” is a mixture of white rice and black beans. The cultural feast is not complete without iced beer, and other accompaniments like ”Yucca” that has been garnished with chopped parsley, onion and lemon, ”Malanga” a root vegetable like corn fritters, fried banana patty and tomato salad with lettuce.

Popular Cuban breakfasts usually consist of ”Tostada”, which refers to buttered and toasted Cuban bread. This is broken to be dipped in ”Cafe con Leche”, which is a combination of strong espresso coffee with warm milk. Ham ”Croquetas”, which is smoky and creamed ham, is another hot favorite.

Cuban lunches would typically have ”Empanadas” - a common bakery finger food item. You would also have chicken or meat turnovers, or Cuban sandwiches. Interestingly, Cuban sandwiches are quite popularly exported to the U.S, and usually consist of cheese, ham, bacon, pickles, mayonnaise, egg and bread. Quite a mouthful! For Dinner, Cubans would have a dish of meat, chicken or fish, which is accompanied by white rice, black beans and maduros, and a salad of tomatoes, onions or avacados.

Mouth-watering Cuban desserts may vary from the typical flan which is caramel-flavored custard, to bread or rice puddings, with shots of cafe cubano. Other delicious varieties are those like the guava marmalade with yellow cheese slices or yucca crullers in anise-flavored syrup.

It is said that you would not be true to Cuban cooking, if you did not lavishly and frequently use Olive oil. Cubans use olive oil for almost all their sauces. Sofrito is another flavor base that is used a lot. It consists of onion, garlic, oregano, green pepper and ground pepper which are quick-fried in olive oil.

The selection and stocking of a bar with the correct supplies can be a daunting prospect for the inexperienced or new bar owner, especially when taking into consideration that the wrong choices can seriously impact on the atmosphere and success of your bar.

So let’’s assume that you have your beverage choices already made and would like some guidance as to what bar supplies you will need to prepare and serve your drinks efficiently to your customers. There are a vast number of items to consider when buying bar supplies so in an effort to keep things simple and avoid confusion I will stick to the basics.

Glassware

Your selection of glassware if chosen carefully can greatly increase the atmosphere and overall drinking experience for your customers, Decide if you want to offer standard styles of glassware which is readily available and cheap to replace, or you may prefer to use more stylised and contemporary types of glassware which may be more expensive and harder to replenish but has the added effect of making your establishment stand out from the competition.

Bottle openers

The ability to open the different types of bottles behind your bar means you will need the necesary tools to do the job. There are two different kinds of openers you will need to purchase, one for removing the pressed bottle tops from bottled beers and one for removing the corks from the necks of wine bottles. Bottled beers need a claw type opener which can be mounted to a surface behind the bar or carried in the bar tenders pocket.

Wine bottles require a corkscrew style opener to prise the cork out of the wine bottle in one piece, again either mounted to a surface behind the bar or carried in the bar tenders pocket. A very popular product commonly known as a waiter’’s friend is a handy device that incorporates both elements of the two types of opener and can easily be stored behind the bar or carried by the bar tender depending on personal preference. Another related product to consider is a wine/champagne re-sealer to keep unused beverages fresh and ready for use at a later time re-sealers can be a simple rubber stopper or can be of a more complex vacuum style often incorporating a pump of some description.

Cocktail Mixing

Cocktail Preparation can be a complex affair with regards to recipes but having the right equipment gives you the foundation to start the learning process. Measuring spoons or thimble/spirit measures are a great bar supply tool for dispensing correct amounts of ingredients,Cocktail shakers are a must have for mixing and blending your drinks to perfection, many shakers are designed with a built in strainer to filter out unwanted ice or fruit from the drink prior to serving.

Pourers and measurers

Nearly all of your spirit and liquor bottles will require some sort of pourer/measurer inserted into the bottle neck. This can be either an optic (mounted to the wall by using an optic bracket) which will dispense a measured amount of spirit by pressing a lever. Also you might want to consider using free flow or measured pourers which require the bottle to be manually tilted over a glass to deliver the desired amount of liquid.

Ice Machines

You can never have too much ice so select an ice machine that is capable of providing you with more than enough ice for a day’’s business. Take into account the storage capacity of the unit and the rate at which the machine will replenish any ice you remove from the unit during bar service. Bear in mind you will need to dispense your ice from an ice bucket (usually insulated and with a lid to slow down the melting process) to speed up drinks service. Whole ice cubes are not always suitable especially for cocktails so provide your bar with an ice crusher either an inexpensive manually hand operated unit or a more costly electric model or alternatively an electric bar blender which can mix large quantities of ice at the same time as other cocktail ingredients.

This concentrate is then added to the drink to provide flavored coffee. Often this type of flavoring is obtained through a product that is in syrup form.

The other type of flavored coffee is through the purchase of coffee beans that have the flavor added to them. Often this type of flavoring is a chemical process in which there are certain agents combined with others to simulate the taste of any particular flavoring. That chemically induced flavoring could be vanilla, chocolate, hazelnut, etc.

How The Coffees Are Flavored

Before the coffee bean can be used to brew coffee it needs to be roasted. This roasting process takes the natural green coffee bean and causes the coffee bean to brown. This roasting of the coffee bean determines the strength of the coffee flavor. This is because the darker the bean, the more robust is the coffee flavor.

Once this roasting process has been completed the beans are then treated with the chemically induced flavorings. This process creates the flavored coffee

If the individual wants to have flavored coffee, but does not wish for their coffee bean to go through a chemical process, there are other ways to flavor the coffee. One such way is through the use of chicory. Chicory is not only an inexpensive filler used to supplement the brewed coffee, but also provides a uniquely flavored coffee for the coffee drinker to enjoy. In addition, another way of providing naturally flavored coffee is through the use of finely shaved vanilla pods added to the coffee grounds or by adding cocoa to the brewing process.

The grape itself can give rise to a buttery feel, but also flavours of apples, lemons, melon, pineapple and other tropical fruits, particularly from warm, New World climes.

Another of the classic white wine online grapes is Sauvignon Blanc, source of some of the fine white wines of the Loire Valley, with such well-known names as Sancerre and posh Pouilly-Fume. To the modern wine drinker, however, it is probably better known as the grape behind the richly flavoured eponymous white wines that have put New Zealand on the wine map.

Mold Can Destroy Citrus Crops Quickly

Anyone who works with citrus crops knows that they can take a very long time to grow and cultivate. But, perhaps even more frustrating than waiting on the crops to have to grow and ripen are the various molds and fungi that could afflict the crops.

The two most prominent molds that affect a citrus crop post-harvest are blue mold, and green mold. These two are caused by the single mold Penicillium digitatum. All citrus fruit growing regions have this mold and it is most certainly a serious threat to the crops.

Citrus fruit is made into an easy target for mold by way of being bruised or by being punctured while it is being packed or harvested. The mold is attracted to the juice that comes out of the damaged fruit on account of the fact that mold likes to grow in wet and humid environments.

And since most citrus is grown in temperate zones, there is no lack of these two qualities. If the fruit is in, say, a large shipping truck with a lot of other fruits, the mold could spread far into the shipment and cause a good portion of it to be riddled with mold infection.

And if the mold makes to the grocery store and the mold, by some miracle, goes unnoticed it could affect other items in the store. If the fruit is left on the tree and mold has spread to it then other fruit on the tree could be affected and the crop could be rendered useless.

The only actual difference between blue mold and green mold is color. There are virtually no differences in the effects the two molds have on fruit. The two molds also have very similar growing environments and necessities and have basically the same needs.

They must both grow in a temperature of around seventy five degrees Fahrenheit. Raising or lowering the temperature can slow the growth of these molds. As such, freezing the citrus fruits can stop the molds growth before any serious damage can be done. This is why most shipment trucks are equipped with a freezer, but many still do not have this feature.

Taking extra care of the citrus fruits is another way to prevent the spread of mold. Caring for the fruit helps to ensure that there is no puncturing or bruising. Fungicides are also a very popular, and a highly recommended, way of dealing with mold.

Quick Meals for Easy Cooking

There are a number of satisfying and nutritious meals you can cook up in no time. You don”t need to be overly skilled in the kitchen, but by using common sense and following these basic guidelines, you can easily create an impressive dish to satisfy any taste.

A great quick and easy meal you can cook tonight is traditional Spaghetti Bolognese. It’’s healthy and delicious, and only requires around fifteen to twenty minutes cooking time if you”re in a hurry. Firstly take minced beef, proportionate to the desired number of eventual diners and brown in a pot. Next add a whole onion (chopped) and cook with the beef until soft. You can also add in all manner of vegetables to your Bolognese, including peppers, mushrooms, carrots - it really is up to you. After you”ve added your vegetables, it’’s a good idea to turn your attention to the spaghetti whilst they are softening in the pan. With one eye on the Bolognese, pour boiling water over some pasta, and bring to the boil, leaving to simmer until cooked. Next, add a can of chopped tomatoes, about quarter of a tube of tomato puree, and a clove or two of garlic to flavour. Mix well, and allow it to simmer until the spaghetti is ready. Finally, serve up on top of the spaghetti, and sprinkle some cheddar cheese to finish.

Alternatively, why not try something more exotic, with this spicy chicken curry idea? Firstly, take some raw chicken breast and cut into strips or cubes. Seal in a pan with oil or butter, and add a whole onion chopped. At this stage, it is also wise to add curry powder and spices to effectively marinade the chicken. This will allow all the flavours to circulate whilst you cook. Next, add around half a can of chopped tomatoes and further mixed spices to taste. Then, boil some rice in a separate pan, and add some coriander to taste, leaving the curry to simmer until the rice has cooked. Serve the curry on top of the rice, and add some bread to finish, for a really great, easy meal. Additionally, you might also like to add some single cream with the chopped tomatoes for that creamy taste.

Overall, by taking simple basic ingredients and using some common sense, you can create tasty meals with very little input. As long as you remember each crucial step, and cook meats well, feel free to experiment, and who knows what you might end up with on your plate next?
