Salmonella is the most common cause of food-borne illness and causes a condition known as salmonellosis. Salmonella is a gram-negative, rod-shaped bacteria that pass from the feces of people or other animals to other people or animals.
What Foods Are Likely to Harbor Salmonella?
Any food that comes from an animal can contain salmonella. Meat, poultry, milk, dairy products, eggs, and seafood are can contain salmonella. Sometimes fruits and vegetables also can contain salmonella. Salmonella can cause sickness when animal products are not cooked to an adequate temperature or when produce is not adequately washed.
What is Salmonellosis?
Salmonellosis is the infection that is caused by exposure to salmonella. Salmonellosis results in more than 500 illnesses each year in the United States.

How Does Salmonella Get Into Peanut Butter?
The peanut butter-salmonella outbreak came as a surprise to many food safety experts. Bacteria typically do not thrive in the high-fat, low-moisture environment that peanut butter provides.
Additionally, peanut butter usually is pasteurized; bacteria do not usually survive the high heat needed for the pasteurization process. Research into the topic of past peanut butter safety, however, provided even bigger surprises. The salmonella outbreak is not the first associated with peanut butter; a similar incident affected about 50 people in 1996 in Australia.
Peanut butter is considered an “associated” source of salmonella contamination; this differs from a principle source, like raw meats, poultry, and eggs. While salmonella can show up in peanut butter, there needs to be a source for the contamination to occur. A study published in Journal of Food Protection in November 2006 suggested that the high-fat, low-water composition of peanut butter was sufficient to sustain the growth of three different types of salmonella.
What Kind of Peanut Butter Was Affected in the February 2007 Recall?
ConAgra manufactured the contaminated peanut butter. Currently, the United States Food and Drug Administration recommends that all Peter Pan peanut butter purchased after May 2006 be thrown away. Wal-Mart’’s Great Value peanut butter also is affected by the recall.
How Do I Know If I Ate Contaminated Peanut Butter?
Exposure to salmonella generally results in fever, dehydration, abdominal pain, and vomiting within about 8 to 72 hours of exposure; those who display such symptoms as a result of salmonella exposure are said to have salmonellosis. Symptoms usually go away within four to seven days. Those with strong immune systems often do not need medical attention to get better. However, for children, elderly people, and those with compromised immune systems, salmonellosis can prove deadly.
Are There Permanent Effects of Being Exposed to Salmonella?
Those who have diarrhea as a result of salmonella exposure usually recover completely. A small number of those who are exposed to salmonella end up with joint pain, irritation in their eyes, and painful urination known as Reiter’’s syndrome. This can last for months or years and even can lead to chronic arthritis.
How Can I Protect Myself and My Family From Salmonella?
Sanitizing is an important part of salmonella avoidance. Alcohol is effective against salmonella, as is quaternary ammonium. Salmonella lives in the intestines of animals and generally is spread by contact with animal feces. Salmonella that is present in the juices of raw meat and in poultry can lead to food-borne illness and also can cross-contaminate other foods.
Food also can become contaminated if handled by someone who has salmonella present on his or her hands. The feces of pets can also lead to salmonella contamination, especially if a pet has diarrhea. Reptiles are particularly likely to have salmonella; after handling a reptile, people should always immediately wash their hands. Cooking meat products thoroughly and measuring inside temperature with a thermometer can help kill much of the salmonella that causes illness.

The word “rational” has all kinds of connotations - good and bad - in today’’s culture. Be rational, we say to people who seem unable to see reason. Or, conversely, we tell people all too skilled at using fake logic to justify their own bad ideas: You”re just rationalizing.
The word - and its varying valuations - attests to the deep uncertainty we feel toward the rational mind; we worry that it cuts us off from emotion and bias, from much of what it means to be human, even as we celebrate its capacity to raise us above the animals. What many people don”t know is that the very word rational is rooted in ancient mathematics, coming to us via the word ratio - a key concept beloved of ancient architects and philosophers alike. And it can help you in the kitchen, too.
First, some background. Ratio is simply a number denoting the proportion of one quantity to another. If I have five apples and six oranges, the ratio of apples to oranges is 5:6. (Sometimes ratios are also expressed as fractions: 5/6.)
The concept is one of the oldest in math; we”re not sure who first discovered its usefulness, but the Harappan civilization of modern-day North India, early pioneers in mathematics, were already using ratios to as part of their surprisingly elaborate brick technology. But the concept of ratio has an especially interesting history because of its importance to the Greeks.
The Greeks were obsessed with the Golden Ratio - a special kind of numerical relationship in which the sum of two numbers to the larger of the two numbers has the same ratio as the larger number to the smaller. Usually credited to Pythagoras, the discovery of the Golden Ratio allowed for the design of the ancient Greek Parthenon (fifth century BCE), and the 12th-century mathematician Fibonacci discovered that many patterns in nature also embodied it (shells, for example).
So ratio is both simple and fundamental. It relates to the ability to keep everything in a proper balance. The fact that the Parthenon is constructed according to the Golden Ratio, for example, helps to account for the clean, timeless, geometrical appeal of that building.
Knowing the ratio of commodity to waste product in a company’’s manufacturing cycle helps us to determine whether that company is working efficiently. And ratio is an important part of keeping track of what happens to different quantities in a mathematical operation as they are all in turn equally acted upon - for example, in multiplication.
But ratio can also help you in the kitchen. Any cook - and any eater - knows that the balance among ingredients in a recipe has an all-important role to play in the taste of your kitchen creations. A simple measuring mistake can mean the difference between a golden, fluffy cake and one with the toxic taste of backing powder. Salt, flour, seasonings: any of these can make a recipe, or, if you add a pinch too much or too little, break it.
So we might say that most recipes can be expressed as ratios - relationships between the quantity of one ingredient and the quantity of another. If salt overpowers the taste of sugar, then you need to remember how many teaspoons of salt can safely coexist with how many teaspoons of sugar.
This becomes important when you need to make more, or less, of something than what the written recipe promises. Let’’s say you have a recipe for a dozen pancakes, but you”re having your child’’s youth soccer team over for breakfast - obviously, you”re going to need, say, three dozen. The recipe you have, for one dozen, indicates that you need 1 cup of mix, half a cup of milk, and one egg. The knowledge of ratio tells you that you need to multiply every ingredient on the list (by three) so that the proportional relationship among ingredients isn”t destroyed. Otherwise, you”ll end up with eggy pancakes, or sugary pancakes, or pancakes so brittle with wheat that they fall apart.
Multiplying by three, you get 3 cups of mix, a cup and a half of milk, and three eggs - and 36 pancakes, none of them ruined by a lack of proportion between one ingredient and the other.

If you are planning an outdoor wedding for this summer, you might like some ideas on the food you might serve your guests. Of course, one way to cut back on your food budget is to keep your guest list small. It is only common sense that the less people you have to feed, the less money it will cost you. However, there are ways that you can serve as many people as you would like yet spend far less than you might expect to.
I have attended several weddings lately and we have had two in our own family in the past year. A big trend is to serve your food buffet style. One of our daughters had an outdoor wedding on the banks of the Snake River. We served a buffet that included four types of sliced meats, several kinds of sliced cheeses, several kinds of salads, chips and home-made salsa, veggie trays and fruit trays complete with a chocolate fountain to dip the fruit in. We set everything out on platters along with several kinds of condiments. We had sliced hard rolls and everyone made their own sandwiches the way they wanted them.
We had all the food together ahead of time and got a couple of my daughters friends to help set up the buffet and keep it going so I could enjoy the festivites. I paid them generously for the day because they worked hard. I couldn”t have done it without them. If your are going to do something like this, you will want to get some help. We served about 150 people so it was a pretty big job. We had tons of compliments on all of the food. The secret was to have detailed plans of what we wanted to serve and get everything all together ahead of time, but it all worked out great.
We attended another wedding where the bride’’s aunts set up a buffet that included different types of appetizers. There were several different types of meatballs, sausages in different sauces, deviled eggs, cubed cheese, fruit and veggie trays. Let your imagination flow and come up with your own ideas. There are thousands of appetizer ideas on the internet. Pick out some easy ones and have a great buffet. Pick things you can make ahead of time that you can heat up in the crock pot and serve it out of the crock pot. As with the previous idea, help from friends and family is probably essential.
Another friend of mine served barbecue pork sandwiches at his sons wedding. This took some work ahead of time, but it turned out totally awesome. He started a couple of months ahead of time by buying pork roast on sale. He slow cooked them in the crock pot, shredded them and froze the meat until it was close to the wedding date. Then he made this wonderful home-made, to die for barbeque sauce to mix in with it all. They served it on hard rolls and believe me, there was no one there that went away unsatisfied.

4. Make a Candy Table
Making a candy table at your wedding reception is another idea growing in popularity. This is mainly because it can be doubly used as wedding favors. Put large bowls of your favorite kinds of candy on the table(be sure you have enough), along with little take home boxes and scoops in the candy for each guest to help themselves to their favorite and take home for later.
5. Wedding Cake
Duh. Seriously, you still want to have your wedding cake, and most everyone is going to want to try it. Have one of your dessert tables at your reception include both wedding cakes, and have someone slice up your cake so that each guest can come by and have a piece of your beautiful wedding cake.
Not everyone will be able to handle a dessert reception with sugar filled snacks only. Be sure to include some sugar free snacks and candy for anyone with diabetes. You will need something for your guests to drink, and the most popular refreshments for a dessert reception is coffee, tea, and of course, milk!

Science has again confirmed that two powerful antioxidant foods, when combined, magnify their cancer fighter power by more than double. What began as party talk between two scientists resulted in them combining their research to how how there might be any unexpected additional good effects. So, Allan Conney, Ph.D from Rutgers and George C. Wagner, Ph.D realized while one was looking at health benefits of caffeine on Parkinson’’s Disease, the other was studying green tea and skin-cancer protection.
Their discovery was that the combination of caffeine and exercise may shield you from skin cancer. It is always a good feeling to send good news out, and then to see further research confirms or not. And so we move forward, and are living longer, as we learn to live more healthy lifestyles and care of ourselves.
We know we need to combine eating fish and any dark vegetable or fruit. Tuna and halibut (and other fish) contain selenium, a mineral that raises your levels of a cancer-fighting enzyme called thioredoxin reductase (TR-1). Likewise, broccoli provides sulforaphane, a plant chemical that also boosts TR-1. When British researchers combined these two nutrients, they noticed that the mixed team was 13 times more effective at slowing the growth of cancer cells than each was on their own.
The scientists believe that as selenium concentrations in your cells rise, the ability of sulforaphane to elevate TR-1 increases. Eat a handful sized piece of meat with vegatables regularly. As well as fish, foods such as beef, turkey, Brazil nuts, and mushrooms are excellent sources of selenium. And cruciferous vegetables such as broccoli, cauliflower, Brussels sprouts, cabbage are also loaded with sulforaphane.
Other good combinations are Salsa and Avocado. The healthiest bright vegetables are rich in carotenoids, powerful plant pigments that reduce your risk of cancer, heart disease, and cataracts.
But we love our secret that you now know. As well as vigorous exercise, you can pump yourself with a delicious cup of coffee. And, to fully benefit from these disease-fighting compounds, you need to eat them with fat. In fact, Ohio State University researchers found that people who ate a salad with half an avocado over it absorbed 5 to 10 times more beta-carotene and lutein-carotenoids found in carrots and spinach, than those who ate salad without the fatty avocado.
In addition, the salsa added to the mix boosted the absorption of lycopene, a carotenoid in tomatoes, by almost five times. Fatty acids are needed to help carotenoids dissolve in the intestines, says lead study author Steve Schwartz, Ph.D. These lipids are also an essential part of creating lipoproteins, which transport the carotenoids in the bloodstream.
So for a tighter bottom line: any time you eat colorful vegetables, whether raw or lightly cooked, have some healthy fat too. It does not have to be an avocado, it could be one ounce of cheese, two pats of butter, or two tablespoons of full fat ranch dressing will fill the bill.
So, yes, we do need some fat a day. Two Tablespoons full. And a good long walk, or remember science says all that cold water is sludging fats and grease along your artery walls. Cup of Coffee or tea, will help un stick that goo from your linings. Here is to clean living, clean thoughts, clean linings. And we will savor the joys of life, do good some smile, and smile within the rest of the day. Enjoy your cuppa.

Since the beginning of time, tableware has been an integral part of our lives. Without which we would not have been able to advance in feeding ourselves, the uses of pottery and cutlery have helped us understand early human development and advancement. There are evidence of earlier ceramic pottery that include bowls, jugs and mugs. These are proof of our first steps into sophistication and creativity.
Amongst the most highly regarded tableware is fine bone china. This has been an integral part of using good quality cutlery and was often used with aristocrats displaying a fancy banquet for guests. It was not only a tool for the table at dinners but also a fine and passionate collectible item. This was, and still is, a highly recommended piece of material to use at the dinner table.
Also more commonly used are ceramic pottery and jugs, which were better to use in ovens and fire kilns. This became the highlight of the Bronze Age, which used clay and sand to form a hard stone. This was also a time for the first instances of jewellery and stoneware. This took our civilisation further into understanding how to use different elements to create useful tools.
Nowadays tableware has become a fashionable movement introducing different shapes, colours and fusing Eastern with Western cultures for more authentic styles. These are also designed to cater to various food tastes. Tabletop designing has fast become a fashion must have for many restaurants as it has done for clothing, cars, make-up and interior design home accessories.
The designing process also allows restaurants to add variety to their menus and palate, giving consumers more options. This also creates a homely atmosphere when people opt to dine out, which promotes comfort and diversity. Where tableware was used as essential tool for consuming food, it has now become part of the dining experience, which includes dramatically changing the appearance to create a specific style on tabletops everywhere.
The shapes, colours and styles of the tableware have made a transition from sharp edged square shapes to curved and rounded. Other styles such as change in colour, as the designs have become much simpler in style. However, some plates and bowls have taken a more bold design using bright colours, yet continuing with the trend of using simply patterns.
Some dishes have come in softer more gentle shapes, such as rectangular with rounded edges, teardrop shaped appetizer dishes or even oval shaped bowls with a softened contoured lining. Silver and gold plated dishes are also still a favourite with the chefs for an even more elegant and exquisite look to the menu.
Cutlery has seen the more significant transition, as originally this was just a knife and a spoon. The fork followed on much later, making it easier and safer to consume food. Today cutlery come in all sorts of shapes and sizes, from deep dipped soup spoons to curved and jagged edges of a knife. Many of these are made from steel or silver, which are often found in silver service restaurants.
Glassware are still an important part of tabletop designing, with some dining places offering tumblers for water, juices, beer or even champagne for an added variety. Glasses can come tinted or clear, yet using glassware is no longer a posh styling for dinner sets. It is also becoming ever more creative and bold, with some restaurants pouring wine in blue tinted glasses.
Tablecloths and linen ware are also a vital part of dinner set designs. Without this, the tabletop sets will not stand out as much they are intended to, hence the change in linen styles and the use of many different shades and colours complimenting the restaurant menu and food taste. Tableware have moved from being one of the most important tools and pieces of history for discovering human advancement, to continuing to be an essential part of creative development and also falling into the world of fashion.

Coffee transcends all cultures and creeds and is today arguably the most consumed drink in the world.
For such a plain and simple plant, it is odd to think that it has had such an impact on our daily lives. The coffee bean is what is contained inside the coffee berry. The two most common coffee plants are the Coffea canephora and Coffea arrabica. Coffee is grown in three main agricultural areas South America, South East Asia and Africa. Although the coffee plant is very robust and can be grown in very much any climate, these agricultural areas seem to yield a plant with just that little bit extra. This has resulted in coffee exports being one of the major contributors to these regions economies and is today one of the largest exports in the world.
The coffee bean was discovered in the highlands of Ethiopia in the 9th century. After spreading to Northern Africa, it took its time to travel into the Middle East but that is where the legend of the coffee bean exploded. Coffee started to be farmed for a greater purpose, and the industry thrived. By the 15th century, coffee was a staple addition to every household from peasants to emperors. The Persian Empire carried the coffee bean westwards into Europe, and then spread further to the New World.

Keep in mind that most Kona blends on the market are only ten percent Kona coffee, and the rest is probably Columbian or Brazilian.
