The Traditional Way Of Making Authentic Parmesan Cheese

Parmesan cheese is one of the most famous cheeses utilized all around the world, especially as a topping for spaghetti and other pasta dishes. Even though many commercial companies advertise their cheese as a Parmesan cheese, actually it is not Parmesan cheese at all. As per the real definition, Parmesan cheese must be made in the region of Parma, which is located in Italy. Parmesan cheese is famous for its unique taste and its hard texture, which are due to their prolonged and very specialized production procedures.

The procedure for making Parmesan cheese is arduous and lengthy. First, the Parmesan cheese is made by a specific blend of two different kinds of milks taken from cows. The first type of milk is known as the full cream milk, which is taken from cows during morning. This full cream milk is mixed with the second type of milk called skimmed milk, which is taken on the previous evening from the same cows. The cows, whose milk is utilized to make Parmesan cheese, are grazed only on hay and grass. This provides the high-quality milk with which the Parmesan cheese is produced. It creates incomparable consistency which intensifies the quality of the cheese.

The milk is then heated and agitated in large copper vessels that are specifically used due to copper”s ability to heat up and cool down very quickly. The outcome is called ”curd” which is then put into a cheese cloth and made into a wheel shape using metal framework. This is kept as it is for a few days. Usually, a wooden log is placed on the top of the cheese to compress or wring out the liquid.

As soon as the cheese is sufficiently dry to maintain its shape, it is taken out of the metal framework and put in a salt-water bath. Here it will float for more or less than a month depending on the taste desired. The cheese is then dressed with a layer of edible wax and it is stored on a shelf in the aging room anywhere from two to three years.

The aging room is maintained at a specific temperature and the room is regularly cleaned while aging. One of the characteristic features of real Parmesan cheese is that it does not contain additives or added flavors. The salt is the only thing mixed with the Parmesan cheese to help obtain its flavor. All the wheels of the Parmesan cheese are separately examined to ensure that it satisfies the required standards before it is shipped for sale.

The making of Parmesan cheese is a treasured art passed down from generation to generation. There is really no comparison between commercially made cheese and authentic handmade cheese created by a master. Just one bite and you will most definitely realize what a true Parmesan cheese should taste like.

Some of the traditional South Indian homes where dosa is part of the everyday menu use grinders specifically meant for the purpose. They then grind the batter in a large quantity to meet the entire week”s requirements. Today there are even modern manageable versions of the huge grinders available. These table top grinders are both lighter and more easily manageable as compared to their heavyweight counterparts.

Coming back to preparing the dosa batter, the ingredients are made into a fine paste and adding salt left to ferment. Once fermented you can enjoy delicious dosa that are crisp, yummy and also healthy. You could also make dosas without fermenting the batter, they turn out delicious too.

There are several variations possible with the dosa. With a tasty potato stuffing you can turn the plain dosa into a masala dosa. Then there are the rava dosa, the healthy raagi dosa, adai ( which combines a variety of lentils with rice, a highly nutritious dosa full of proteins) and you can have a hundred more with a little creativity and experimenting with the stuffing.

The dosa is served with a variety of accompaniments like the chutney and sambar. Today most supermarkets and food stores stock readymade dosa and idli batter and so for a working couple or with anyone with very little time on hand too, making a dosa is possible with ease.

Are Eggs Really Good For You?

It amazes me how often you hear about eggs and their nutritional value or lack thereof. It seems every year there are studies done to show that eggs are bad for you and high in bad cholesterol and other harmful things. Then the week after another world class higher learning institution with a team of intelligent professors and students will say the exact opposite.

I for one have stopped listening and all the while I eat eggs on a regular basis. My family of three which includes a 1 year old daughter go through almost two dozen eggs a week and for myself I eat two eggs almost every single day. I do this for two reasons, eggs are the ultimate fast food or should I say good food fast and most importantly they taste great. If eggs are in fact bad for you a guy like myself who eats more eggs than most would be a pretty good benchmark, no?

Well two weeks ago a had my first physical in almost 4 years, yes I should have done one each year but given my age I figured I was ok. After a full physical which included a blood test the results don”t show that eggs are bad for you. My good cholesterol is at high levels and my bad cholesterol is at low levels. You should note that I eat what I would call a European diet. I drink wine with dinner almost every day, I don”t avoid carbs, bread and pasta are my friends and I eat meat on a regular basis. My family does focus on buying foods from our local farmers market, we happen to be very lucky not only to have the farmers market but the local farmers have green houses so we are getting local amazingly tasty produce almost year round.

We have recently started to focus on eating larger breakfasts and lunches and smaller dinners. Our favorite dinner that we usually have once a week is Wine and cheese. Usually served with a proper baguette that we get from an amazing local bakery, olives and some type of fruit whatever is in the house. My wife and I in a very relaxed state usually talk a little or read a book or magazine and dinner can take about 2 hours to complete. We often have about three cheeses, there are the staples which is a very old cheddar and a peppered goat cheese and the third is a new cheese we try to find every week. With the amazingly huge selection of cheeses available from around the world it is going to take a lot of wine and cheese nights to get through them.

My point about our lifestyle is that we above all things enjoy food almost as much as we love our family. Food really is one of life”s great pleasures and we take that very seriously. So stop reading what the food experts are saying, listen to your body and most of all your taste buds. Life is all about moderation and great meat, eggs, bread and pasta can all be enjoyed without someone constantly telling you they are good one month and bad the next. Diet fads are just that, fads and should be avoided at all costs!

There is a reason the French live so long they don”t treat food the same way we North Americans do. Food is life and is to be enjoyed with friends and family, not inside your car!

The smallest town in Metro Manila, Pateros has been famous for being the Balut capital of the country. Most people say that the Balut in Pateros is the most delicious ones ever in the whole world. Locals of this town has lived on and passed techniques on how to make the best from generations to generations. So for those who plan to visit the Philippines, drop by at Pateros and indulge yourself with the taste and flavor of Balut.

It might be unacceptable to some but for Filipinos, it is one of the country”s most treasured delicacies. It has made the Philippines unique from all of the countries in the world.
