If you are a beginner then you will need some guidelines on how to barbecue and which type of barbecue to purchase. When purchasing your first barbecue the choice is between a traditional charcoal barbecue or a more modern barbecue powered by gas. Charcoal barbecues are cheaper and many people prefer this traditional choice but they are harder to light and to control the temperature. Gas powered barbecues are more expensive, light instantly and have good temperature control.
Charcoal Barbecues
Charcoal barbecues are simply metal, fireproof bowls in which charcoal is placed under a cooking grill. The grill may be adjustable and there may be adjustable vents in the bowl. When using a charcoal barbecue please make sure that the charcoal comes from a sustainable source. Over 97% of the charcoal sold at present does not and often comes from tropical rainforests which are increasingly endangered.
Gas Barbecues
Gas barbecues may be powered by propane or natural gas. They are easy to light, usually by just pushing a button, and may have up to four burners and often side burners for boiling and warming sauces etc. The cooking system may be angled steel bars or lava rocks on the bottom of the cooking compartment. Angled bars are preferable as they can prevent the juice that falls from the food onto the bottom of the compartment pooling and causing flareups. Instead the juices are vaporized and the smoke rises through the food to give it a better flavor.
Successful Barbecue Tips
1. Charcoal is ready to use when it is glowing red inside a grey on the outside.
2. Ensure that the cooking rack is hot before you add any food. Place the food in the middle of the grill to sear it and turn it. Food will initially stick to the rack but will be removable once it is seared.
3. Place food that is quick to cook in the middle of the cooking area over a medium heat. This includes fish and vegetables. For slower cooking foods, poultry and meat for example, sear first in the middle where it is hottest then move to the sides to cook more slowly.
4. Make sure the food is cooked all the way through. If in doubt use a meat thermometer.
Barbecue Flavoring
The unique, smoky flavor of barbecued food comes from smoke that is released by the juices that fall into the corals or the burners. You can improve this flavor by using glazes or marinades on your food. Barbecue recipe often use marinades, not so much to tenderize the meat, but to add to the flavor. Marinades often contain lime juice, wine or yogurt which break down the proteins, flavorings and oils to keep the food moist during cooking. Marinades for fish or vegetables do not need tenderizers.
Barbecue Safety
Food poisoning from barbecue food occurs much too often and can easily be avoided with some care and knowledge. In warm temperatures bacteria flourish and if you leave uncooked food around on a hot day you are inviting trouble. Poultry often contains salmonella and campylobacter and meat may contain E. coli. The numbers of these bacteria can easily double in less than 30 minutes on a hot day. It is also very easy to contaminate already cooked food if you place it next to uncooked food or use the same utensils.
Safety Guidelines
1. Always completely defrost fish poultry and meat, either in the refrigerator or in a microwave. It is not a good idea to slowly defrost at room temperature as bacteria can grow on the defrosted edges while the rest is still defrosting.
2. Do not allow raw food to come into contact with cooked food or use the same work surfaces or utensils for both without washing thoroughly first.
3. Ensure all food is called thoroughly all the way through. Chicken, burgers, meat, turkey etc. should be cooked until the inside is hot and not pink. You could use a meat thermometer to make sure of this.

I was searching online for a few of these gift basket companies and I have to be honest there’’s quite a few out there. But there’’s one in particular that caught my eye and I really enjoyed looking through all their different products and product options its called Gift Tree.
Plus on top of that the prices are really good. As a Chef I take notice in presentation, besides flavor, presentation is THE most important part of a meal or a product or anything like that. If you want to even just visit the site you can see they really care about their products.

I admit, eating healthy is not an easy thing to do in this day and age. We live in a world of “processed this” and “chemical that”. It seems that convenience far out weighs the concern for being healthy.
But it doesn”t have to be that way. You can eat healthy, and not feel like you are missing anything. All we need is a little knowledge, and some planning.
Think about a candy bar for example. How many times in a week have we needed something to make it through the day? We think to ourselves, “I”ll just run to the vending machine and grab a candy bar!” Is that really the best choice for us? Is it really going to satisfy us? I don”t think so. We”ll end up regretting our decision just moments after eating a bar full of toxins and chemicals.
Instead of grabbing a candy bar, I found a great alternative. No, I am not going to try to tell you that a granola bar is just like a candy bar. While granola and similar bars are reasonable alternative, there are many other options - and many that are much more tasty, well balanced, and not so hard on your teeth.
The bars of which I speak are delicious and are often made with whole, raw foods, and/or Organic foods, and nothing else. They taste good, and they are healthy. These new bars come in many types and flavors, from a number of companies. Of course I can”t explain the amazing difference in taste and quality since the 1970′’s style health food, but to put it bluntly: it is a world apart.
Some brand examples are PranaBars, Larabars, Organic Food Bar, and BoomiBars, but there are others. Be careful though, there are plenty of imitators. The real test is to look at the ingredient list. If it contains anything you have never heard of, or sounds like something from high school chemistry, then you need to try a different brand.
One company makes a great tasting bar with only two ingredients (Cashews and Dates,) but it is common to see up to a dozen ingredients. And each and every ingredient is wholesome food. There is no need to settle for even a single ingredient that is a chemical nightmare.
These bars are not available at all stores. I have found them at most health food stores and some grocery stores. They cost more than a candy bar does. But anything that is “worth it” will cost more. And like I said earlier - your health is worth it! Seriously. It is far better to spend a little to get excellent food, than to spend even more to get a really nasty doctor visit later in life.
You might think it is just easier to go to the vending machine and grab that candy bar, right? Well, you might be correct. I admit, eating healthy does require a little planning. But in the long run - your health is worth it!
This is just one example of how anyone can eat healthy and not feel deprived. Most junk foods that you can think of have very healthy counterparts. The food bars often even take care to have a whole list of important health related features. Some of their advantages are: no added sugar, unprocessed, raw, enzyme active, whole, natural, non-GMO, gluten free, dairy free, soy free, vegan and Kosher - not to mention one of the most important: Organic. What can I say, they are a perfect snack!
So, what are you going to do the next time you are craving a candy bar? Instead of running to the vending machine to fill your body with chemicals; why not reach for a food bar that is healthy and good for you.
Healthy candy bars are just one part of our proper diet. You can explore some other great alternatives to the junk food with other articles in this series. As always, when cooking use the best ingredients you can afford. Buy organic whenever possible. Do your best to keep those nasty toxins out of your diet. Use raw and unprocessed whenever possible. Eat healthy, feel healthy, be healthy. Enjoy life.

If you planning on entering the business world will find that you will have to take prospective clients out to dinner quite often in which case, you should be abreast on the etiquette of business dining. This means a lot more than just knowing which pair of shoes and what color tie to wear to dinner. But speaking of ties, dress is the first item on your list of what to address when planning a business dinner with an existing client or a potential client.
Dress for Dinner
Many upscale restaurants require a coat and tie. There can be nothing more embarrassing than showing up in casual wear and being asked rather indiscreetly to wear one of the stock coats and ties.
When dining with a client, you can never go wrong with a smart, well fitting and well ironed jacket with a crisp shirt and a silk tie. A neat little tie clip or a tie pin, will not only make you look suave and sophisticated, it will also help you keep your necktie from falling into your dinner.
If you are invited to a black tie business dinner, you will need to don a tuxedo. In this case, you will need a bowtie.
Make Reservations
Find out a little about your clients favorite cuisine and take them to a restaurant that has the best reputation in serving that particular cuisine. This is not the time to check out the new, eclectic Sushi bar that everyone is talking about. Stick with a traditional choice in a business dinner and save the stepping-out-on-a-limb choices for a date. Choose a restaurant with which you are familiar and is ideal for a business dinner. Make reservations, request a good table and dont forget to inform the restaurant that this is an important business deal.
Wait for your Guests
If you happen to arrive early, wait for your guests to arrive. Dont get caught sitting in the bar, half tanked when they get there, tie askew and jacket off. Wait in the lobby for your guests and go with them to the table with the Maitre d. If you have never tipped a Maitre d in a restaurant before for a good table, now is the time to do so. You will be surprised at the choice of table you can get for a mere $20 tip.
Exercise Dinner Etiquette
Allow your guests to order first. If this is a dinner, you may want to start with cocktails and then order food. Go easy on the cocktails though. You do not want to imbibe in alcohol too much at a business dinner - this is not a frat party. One drink is plenty. Be sure to make sure your guests are content with their drinks before ordering.
Exercise Good Table Manners
Place your napkin on your lap. Use the right cutlery. Pass the bread to the right before taking any yourself. If you have to get up during the course of the meal, put your napkin on your chair and ask to be excused.
Apologize for the interruption if you get a phone call and take it outside. Having a cell phone conversation at the dinner table with clients is about the rudest thing that you can do. Put your phone on vibrate and, if there is an emergency, excuse yourself to take care of it briefly.
Have Money for the Bill
When everyone is satisfied and you have asked if the dinner and food was to their liking, then ask for the bill. Make sure that you have enough money on your credit card or debit card if you are not carrying cash to pay for the bill. Not having the money can ruin any potential deal for you.
Remember that you are the host and it is up to you to see that they have a good time. Dress smartly, wear a suit and tie and be sure that your guests get everything that they need and are satisfied. By following these simple rules of etiquette, you can impress your clients and clinch any business deal.

Peeling a potato? Just about anyone can do it. This was what I thought till the other day I had a friend over for lunch. Although he is a novice at cooking it was very sweet of him to have volunteered to help me with the cooking. So here we began, he washed the vegetables for me (little things that he felt he could do). Then thought we could go ahead and when he asked about what else he could do I suggested peeling the potatoes for the fries.
He had seen me peeling the carrots and picked up the peeler and tried 2-3 times without making any visible difference to the potato. That’’s really the first time I realized that there really are people out there who need help on how to peel a potato. So this blog is dedicated to my friend who did manage to learn after all how to peel a potato.
-First and foremost, I would suggest that for beginners the peeler is a better tool than the knife. You are more likely to injure yourself with a knife if you are an absolute beginner. A simple potato peeler (the right size that you can hold in your hand) is all you need.
-Wash the potato peeler well, before starting. You must also remember to wash and dry the peeler after every use to get rid of all the peels stuck in it and keep it clean. Hygiene is very important in the kitchen and as one who cooks you are also responsible for the health of those you feed.
-Wash the potatoe well and pat dry. Potatoes generally have a film of dust on them and therefore, washing them becomes all the more important.
-Hold the potato firmly with your hand (for righties like me , it is the right hand for the peeler and the left hand for the potato). Hold the peeler at a slight angle so that the blade of the peeler is able to peel off the skin of your potato easily. Move the peeler towards you with every act of peeling. A little pressure is all you need to apply.
-Once you know just how to do it, all the potatoes that you need can be peeled quickly and without much effort. Keep turning over the potato and repeating it until the entire potato is peeled.
-If you decide to use a knife instead, then hold the knife in the hand you would hold the peeler in. Slowly work the knife in a direction towards you peeling off the layer of skin. You need to be extremely careful and have good control while peeling so as not to cut your fingers or peel it instead of the potato.
Peeling a potato can be really easy if you know just how to do it or else it can be the toughest of jobs (my friend claims to have mastered one of the toughest things with learning how to peel a potato). There are a lot of delicious dishes you can make with the versatile potato, do not let ignorance on peeling be a stumbling block to some great cooking.

Times Online has come up with 50 of the World’’s Best Food Blogs. I have been having a feast since yesterday just blog hopping. From main dishes, side dishes, appetizers to desserts just about anything or maybe should say everything that I could think of is there here. A foodie’’s wish come true. It’’s all a delicious world. I am so tempted to pick up the fork and spoon and get started.
This whole thing of surfing through foodie blogs has actually got me thinking about what is it that makes a blog stand above the rest. With hundreds and thousands of food blogs with varied themes making their entry into the web world each day what is it that can make you different?
Each one of us bloggers here is passionate about food, eating, cooking, writing and want a big share of the pie. However, what should you do to make yourself heard? I have been able to come up with a few observations while surfing through the blogs:
-Content sure is king in the blogging world. A blogger adds a personal touch by sharing his/her personal experiences and this is what makes a good read. When I surf it is useful and interesting content that makes me stop by at a particular site. Some recipe that interests me, a tip that I can use or an interesting food article is what attracts my attention. The quality of content is very important.
-Speaking of quality is quantity a question that I consider. As a blogger, I know the sheer hard work that goes behind creating quality content but the key to success is being regular or quantity. When I visit a blog today and I like it, I make it a point to drop by a few days later. For me new content every time I visit is important something that keeps going. A few visits and if there is still no change or nothing new and interesting then I drop it from my list. Regular content that is of high quality and useful to the visitors is what brings them back I conclude.
-One observation of the blogging world is that inspite of each one trying to get a higher page rank and getting maximum traffic there is a camaraderie that comes out so very clearly. Each of the passionate and regular bloggers make it a point every day or every few days to visit other blogs, leave comments, try out recipes and techniques from other blogs and also the blog events. There are events held by some or the other blogs each month on a particular theme with others participating enthusiastically by sending in their entries in the form of innovative recipes and even food pictures.
Although for being high on the search engine ranking each one blogger works with search engine optimized content and link building, but the underlying strength of the blogging world is the element of fun, entertainment and camaraderie.

Red Lobster Shrimp Diablo
ngredients: 3 pounds large uncooked shrimp in shells (no heads), 1 jar BBQ sauce, 1/2 cup ketchup, 1 tablespoon freshly-ground pepper, 4 tablespoons liquid crab boil, 1/4 cup red hot sauce, 1/2 pound unsalted butter, 1/2-1 gallon milk
1. Wash shrimp in cold water
2. Soak shrimp in milk overnight
3. Mix all sauce ingredients in sauce pan and stir until boiling
4. Remove from heat and refrigerate for at least 4-5 hours
5. Drain milk from shrimp and place in a baking pan
6. Cover shrimp evenly with the sauce
7. Let stand one hour
8. Bake uncovered at 450 degrees for 15 minutes

Delicious meals (which would cost your family hundreds of dollars) can be made right from your own kitchen. Imagine the savings in your bank account. When it comes to health and nutrition, most people like to believe they already know what’’s best for their diets. There are so many yummy raw foods. Sashimi, cold smoked or cured fish is popular to eat as well as delicious. Raw goat cheese and sheep cheese can be used to top salads. Raw nuts and seeds can be ground up or eaten whole. Raw and dried fruit and vegetables can become fancy platters when hosting a party.
When it’’s hot outside, gazpacho and cucumber raw soups can cool you down. Super-foods including raw meats (which includes cold smoked or cured meats), sprouted breads, bagels, and tortilla wraps can provide satisfying dinners and lunches. Last but not least, raw cakes, cookies, smoothies, ice-creams, alcoholic drinks, juices can be snacks or dessert. Blenders can be used to make plenty of delicious things to eat and are extremely popular tools to use with raw foods.
Juicers are very helpful when creating raw food meals and snacks. Each type of juicer has advantages as well as disadvantages. Figuring out which one you need is easy if you learn what each type is for. A manual press style juicer extracts the juice out of fruit with pressure. It is shredded then the pulp is pressed further by hydraulics or pressure. Soft fruits are preferred by this method. Organic veggies and fruits are the best to use. Very important enzymes are intact in fresh juice which means it’’s more beneficial to your whole-being.
Centrifugal juicers utilize a shredder or grater disc. They juice produce from the top down. The fruit or vegetable is pressed down a chute where it gets shredded, thereby releasing juice.
