Versatile Tuna Steak Recipes For Healthy Diets

Tuna is very versatile. Packed full of protein, vitamins and Omega 3 it can provide a substantial meal in a matter of minutes.

The most popular way of cooking tuna steaks is to griddle or pan fry. Little preparation is needed if you buy pre-prepared tuna steaks from the chilled cabinet.

A healthy warming supper dish of tuna casserole is quick, easy to prepare and cook. Simply cut the tuna steaks into bite sized chunks or thin strips and quickly brown, before adding to a casserole dish with other vegetables and a fish stock.

Add strips of tuna steak to pasta combined with a cheese sauce and pop into a hot oven for about thirty minutes to make a delicious supper dish full of goodness. Simply serve with hot crusty bread or a fresh salad leaves.

Tuna steaks cut into small pieces are ideal for including in a curry. Add them ten minutes before serving so that they do not overcook. Tuna fish with a coconut curry sauce offers a tasty alternative to meat.

Due to the oily content of tuna steaks there is no necessity to cook them with vast amount of cooking oil. This will impair the wonderful flavour and produce a greasy taste. A small amount of oil is needed to prevent the tuna steaks from sticking to the pan and no more.

By sauteing finely chopped onions and garlic in the oil will enable the tuna to soak up the flavours during cooking. Alternatively marinating the tuna steaks for an hour before cooking allows the flavours to be soaked into the flesh. Honey and whole grain mustard make a wonderful marinade for tuna steaks.

Griddled tuna steaks require no preparation at all. Simply place them on a hot griddle for a couple of minutes each side for a rare steak or three to four minutes each side for medium rare.

After a week of working hard in the office, we all like to let our hair down and go a bit wild at the weekend. Whether you are into film, theatre, food or frenetic partying, a venue can either make or break the night. This is why we all have our favourite places to go, somewhere where we can guarantee that our money is well spent, that the atmosphere will be fabulous and the night will not be a disappointment. All good venues are promoted by word of mouth, and as people are becoming less wary of spending their last few pennies on experimenting with a new place, we are here to give you some of our top recommendations for venues in the UK.

Cinema
Although I love the surround sound, the director style comfy seats and actually being able to see over the head of the person in front, modern cinemas are lacking a certain something. I miss the days of threadbare velour seats, gold tasselled velvet curtains and spotlights highlighting art deco interiors. If you miss this kind of thing too, then you should get yourself down to the Duke of York’’s Picturehouse in Brighton. This cinema has been going since 1910 and it is famed for its arty ambience and massive stripy legs on the roof. It also has a wonderful tea room with a balcony, so rather than just handing over your pennies to go watch a film, you can actually have a day out. As far as cinema venues go, it is definitely worth a visit even if you are from well out of town. Thankfully, it is renowned for late night showings and for playing cult classics.

Food
There is nothing like sharing a big meal and a few glasses of wine with friends. Unfortunately, unlike the rest of Europe, the UK doesn”t seem geared to socialising in this way. Small music venues with a disposition for local talent are also becoming a rarity as licenses for entertainment are being restricted by local councils. Sometimes the best thing a group of people can do is hire a place for themselves. Once again, a Colchester based venue is on hand to offer the discerning music lover somewhere to escape to, and has the option of being an indoor or outdoor event. The Minories is a beautiful listed building with a mature garden. Capacity is limited, but the provision of home cooked food, fine wine and friendly staff make this a favourite place for promoters to book bands.

Comedy
And it is back to Brighton for one of the best comedy venues in the country. Komedia is a long standing staple of the seaside town and it attracts big names on the circuit whilst offering the traditional candle lit table set up with food and drink. Due to its popularity it is wise to book well in advance, but the mix of local comedy talent with established names guarantees a great night out for all who go.

Tea Time From Timbuktu To Tottenham

Tea is considered the drink of the nation; a good old proper cup of the well stewed beverage starts many a person’’s day with a slice of toast; perks them up midday with a chocolate covered digestive and adds a little bit of a mid-afternoon lift with a slice of cake. However, the drink is not just about Tetley’’s, Ty-Phoo and PG Tips, there are many different varieties that are savoured by connoisseurs the world over. From the white tipped pickings of the Camellia sinensis to a herbal brew of a Yerba Mate, tea has a rich history of ceremonial significance.

What many people don”t realise is that white, yellow, green, oolong and black tea are all from the same plant, the Camellia sinensis, and the varieties are distinguished by their fermentation processes. Basically the lighter the tea, the less processing it has undergone. From picking to rolling and drying, each variety is treated differently to produce anything from a refreshing and delicate brew to a heavy and dark beverage that is best taken with milk and a spoonful of sugar.

Originating in the Chinese foothills, the plant has long been used for trade, and some of the finer brews were once worth so much money that only the wealthiest and most important people were able to get hold of it. During Victorian times the caddy was kept locked away to prevent the valuable contents being stolen by servants, a far cry from the cuppa we know today, available for as little as fifty pence in a polystyrene cup on a windswept promenade. It was the changes in trading, and the wide-spread uptake of tea growing that helped the drink become accessible to all. The plant is now brewed in most countries where the climate is favourable, but still the best is reserved for the ones who can afford it, and certainly wouldn”t be something you”d dunk a custard cream in.

Tea experts spend a considerable amount of time finding rare varieties, the taste of which is affected by the type of climate and the altitude of the area it is grown in. Special blends are made, and some of these are from plants that can only be harvested in small amounts in hard to reach places. To fully appreciate this type of brew it is best to adhere to one of the oldest tea making traditions in the world, the Chinese Tea Ceremony.

Although it depends on the formality of the occasion, the rule of thumb is that the more delicate the tea, the cooler the water should be. The drinking vessel and pot if one is being used should be warmed using the heated water, and then loose leaves should be carefully placed at the bottom of the brewing or drinking vessel. Using the heated water, rinse the leaves and drain the water into a cup ready for serving. This process can be repeated for several servings, sometimes being poured collectively into a second vessel to produce an even blend of tea.

These kinds of ceremonies are not restricted to China or the Camellia sinensis plant. Morocco has a long standing tradition of drinking mint tea. Although ”tea” from any plant other than the Camellia sinensis cannot really be classed as proper tea, it is said to be a herbal infusion. Never the less, a drawn out process that involves lots of pouring from pot to cup and liberal amounts of sugar is regularly and ritually performed by Moroccans and is the drink of choice, bringing people together as a shared and social occasion. Much like us popping on the kettle and getting out the Hob Nobs when a friend is coming over.

Gourmet Salts And How To Use Them In Your Creative Cooking

Perfection on earth with the creation and taste of gourmet salt on your fabulous recipes. It is my intention to advise you about these gourmet sea salts and just what they can do for your cooking. Many of these gourmet salts are produced by a company called “Saltworks”. The differences will be pointed out to sort one from the other, so that you will know when cooking just what to choose. But first, a little information on salt.

Sea salt is obtained by evaporating sea water. Common bodies of water for extraction of sea salt water is in the waters of the Himalayas, the Dead Sea, Pacific Ocean, Mediterranean Sea and Utah’’s Great Salt Lake City.

Because sea salt generally lacks high iodine, an ultimately essential element for human health, we must be certain to get our iodine from other sources such as dairy products, processed foods, and regular foods.

Gourmet cooks believe that sea salt is better for us as the taste and texture ultimately give flavor changes that occur during our mouth’’s feel, and the time it takes to actually dissolve the sea salt.

Salt has been considered a basic commodity until recently. Salt was just plain old salt. However, as Healthy Recipes” has learned, gourmet chefs, cooks at home have learned about the value of different salts and how they can enhance their cooking by using these varieties of sea salts. However, unrefined sea salt contains many other minerals that iodized salt does not have; such as calcium, potassium, magnesium sulfate and traces of others such as lead, mercury, and cadmium. Something else to mention is sea salt is generally more expensive than regular refined salt. The taste is worth it!

Black Salt is an unrefined mineral salt. It appears to have a pearly pink rather than black appearance, and it carries a strong sulfuric odour. Black salt is available in a very fine or a coarse grain.

Main use: Authentic Indian cooking.

Celtic Salt(French Grey Sea Salt) refers to naturally moist salt harvested from the pristine Atlantic seawater off the coast of Brittany, France. Rich in trace mineral content, these salts are hand harvested by using the Celtic method of wooden rakes. This way, no metal touches the sea salt. Celtic Salts are available in coarse, stone ground and extra fine grain. The coarse salt is a larger grained sea salt.

Coarse salts are most commonly used by Chef’’s. According to “Saltworks”, many recipes prefer to use finely ground salt, Chef’’s prefer to use the coarse salt because they can easily measure it with their fingers. It is less moisture sensitive, therefore it resists caking and is easily stored.

Uses: Salt crusts on meat or fish, and flavoring for soups stews and pastas.

Finishing salts that are grown in particular areas of the world, are known for their unique textures which allow them to quickly dissolve as they are used in presentation. Salts such as these, bring out the natural flavors of any dish. See below for these finishing salts.

Flake Salt is a light, crystal-like snowflake. These salts are are from the evaporated sea waters and use the natural process of sun and wind producing a salt brine that is fed into an open evaporating pan. The brine is then slowly heated until the delicate snowflake pyramids appear. This finished product is a light flaky salt.

Uses: Flakey salt is used to bring out the depth of flavors and would be used on numerous vegetables, freshly cooked.

Fleur De Sel(flower of salt)is the “top-notch” condiment salt. This Artisan sea salt forms naturally on the top of salt evaporation ponds, and harvested by salt farmers. True Fleur De Sel comes from the Guerande region in France. Different areas produce salts with their own unique flavors and aromas.

Uses: This “flower of salt” is ideal for salads, cooked fresh vegetables and barbecued/grilled meats.

French Sea Salt is harvested from the pure, unspoiled Atlantic Ocean, and unlike many American sea salts, these are usually refined, so they keep most of the important trace minerals that occur naturally in sea water and in small amounts is healthy for us. These salts also include iodine. French Sea Salt is available in coarse, stone ground fine and extra fine grain.

Uses: Grilled meat, cooked and fresh vegetables, and ideal for salads.

Grey Salt is a moist, unrefined sea salt which is usually found on the coastal areas of France. This salt has a purple hue to it and comes from the clay in the salt flats. Amazingly, this salt is also collected by hand by the Celts. This salt has only come to the market in the past few years and has become very popular as it is considered to be of the best quality. Grey salt comes in coarse, stone ground fine and extra fine grain.

Uses: Flavoring foods at the dinner table at the host’’s discretion.

Grinder Salts are large dry crystals that always require a grinder. It is important to note that one must always use a ceramic salt grinder, with plastic or ceramic parts, as salt will corrode and affect the taste of the salt in a manner that is not palatable.

Uses: Flavoring foods at the dinner table at the host’’s discretion.

A natural mineral called Alaea (means volcanic baked red clay) in Hawaii is added to the salt to enrich the flavor. The clay is what gives it the distinctive pink colour. It is the clay that also gives this salt a more mellow taste than regular sea salt. The Hawaiian sea salt comes in a fine and coarse grain.

Uses: This salt is a traditional Hawaiian authentic seasoning for dishes such as the Kahlua Pig, ribs, pork loin and Hawaiian Jerky.

Italian Sea Salt comes from the low waters of the Mediterranean along the coast of Sicily. Italian Sea salt is a natural salt which is rich in minerals such as iodine, magnesium, fluorine, potassium; most importantly, it has a much lower percentage of sodium chloride, which is a good note for most of us as most processed foods are pre-salted. The salt pans are filled with water in the spring and left to evaporate with the assistance of the heat of the Sicilian sun and the African winds. Harvesting is ready when water has evaporated and the salt is then crushed without further refining. Italian Sea Salt is delicate in taste, and not too salty. It is available in coarse and fine grain.

Uses: Salads are a favorite with Italian salt, and roasts and sauces. It is also used for a garnish on bruschetta.

Kosher salt is a regular salt that is used by the Jewish denomination in their diets. The salt comes in flakes and therefore dissolve easily.

Uses: Kosher salt is used on top of pretzels and for the rims on Maragarita’’s.

Organic Salt is not certified, though it is definitely ensured in the purity of the water used and the cleanliness of the salt beds and in harvesting and packaging.

Uses: Organic salt is used just as we would use a normal salt.

Smoked Sea Salt is fairly new to the gourmet salt user’’s of America. Salts are naturally smoked over wood fires to infuse the salt crystals with 100% smoke flavor. Smoked Sea Salt comes in a coarse grain size.

Uses: Smoked Sea Salts are used in a unique variety of dishes including roasts, chicken, salads, pastas, sandwiches and probably the most favorite, grilling Salmon or even roasting in the oven.

Many Healthy Recipes can be created and a special touch of your favorite sea salt. Certainly, you will likely not carry all of these salts, but choose some of your favorites, including the Italian Sea Salt which has contains lower percentage of sodium chloride, which is very important to note for your health. Ingredients for sauce: 2 tablespoons oyster sauce, 1 1/2 tablespoons water, 1 tablespoon cooking sherry, 1 tablespoon hoi sin sauce, 2 teaspoons corn starch, 1 teaspoon sugar, 1 teaspoon sesame oil

1. Pour boiling water over dried mushrooms and soak for 30 minutes before draining.

2. Combine all sauce ingredients to create sauce

3. Mix together chicken, salt, pepper, water, sherry, soy sauce, corn starch until chicken is coated.

4. Heat in large skillet over medium/high heat and add 3 tablespoons of oil and fry for three minutes. Remove Chicken.

5. Add 2 more tablespoons of oil. Add ginger, garlic, green onions, and chilies and fry for 60 seconds. Do Not Overcook. Add the mushrooms, bamboo shoots, and water chestnuts and fry for 2 minutes.

6. Return chicken to skillet and combine all ingredients. Add rice noodles (broken into pieces) into mixture.

7. Add the chicken and sauce mixture to your lettuce wraps! (You may secure with a toothpick if necessary)
