Basic Coffee Grinds
There are three main types of grinds, each yielding a particular coffee strength, as well as requiring a particular type of coffee maker.
Coarse Grind - A coarse grind coffee is primarily used for the press pot, which is also known as the French press.
Medium Grind - A medium grind coffee is what is required by automatic drip pot brewers and vacuum-pots. Also, there are different degrees of medium depending upon filter type.
Fine Grind - The fine grind produces a strong coffee and is used for to make Espresso with a specific Espresso machine. While this grind can be used in a a regular coffee maker, it will leave sediments at the bottom of the coffee pod.
Extra Fine - Produces a very strong coffee and can be used in Espresso machines.
Super Fine - This grind makes coffee on turbo! It is used to make the most strong coffee, called Middle Eastern or commonly referred to as Turkish coffee in in a small pot called an Ibrik.

Eggs are an important ingredient that I always have on hand. My refrigerator would always have a regular supply of eggs whether it is for my baking experiments or for a quick snack. Dinner ideas with eggs too interest me - probably due to the fast to cook good to eat factor.
Eggs are wholesome food. A good source of protein they are surely ones to be added to the diet of growing children and also those involved in high levels of activity. Eggs are one that I always have ready, just reach out and I need to have them for sure. I am sure most of you agree with me. An easy to cook nutritious meal. However, sometimes when the eggs in the refrigerator are there for some time without you realizing then the case of doubt emerges. If by chance I have forgotten about the poor eggs in the refrigerator and not put them to good use then I am left wondering whether they are fresh to be consumed or not.
Initially I would have to break each of the eggs and then either be happy or disappointed depending on the results within. But I would still have to break each one of them to find out. How to check an egg is fresh without having to break them and suffer the smell or stink of a bad egg or see those black dotted shells is one exploration that I decided to make.

Roasted chicken with the heavenly golden brown hues, the juicy interiors and the browned exteriors is so very inviting. For me this is one meal that I can have for days together without ever saying no to a helping. The fact that it is delicious and healthy is what adds to the attraction of this great meal. Roasted or grilled chicken is a simple and easy dinner idea, can get everything ready before hand and then for dinner all I have to do is grill it or roast it.
Many of my friends recently had this request to show them how to carve a chicken. Carving chicken I tell them is all about knowing the anatomy of the chicken. If you know the joints right, then it is all about separating the pieces at the joint. How to carve chicken would include separating the two leg pieces, the wings and then carving out the flesh from the chicken breasts. Sounds simple?
How to carve a chicken is all about practice. I guess everything with cooking is practice. The more times and the more passionately you do it you, you are sure of more delicious results. The same principle works with carving a chicken. Practice makes perfect. With practice one would be able to do it with ease and better, so says my experience at carving the chicken.
Take out your roasted chicken and get hold of a sharp knife (not too big nor too small) and we can get started on how to carve a chicken.
1-Place the whole roasted chicken on a cutting board. I prefer to have a separate cutting board for my veggies and chicken and other meat. The chicken should be placed breast side up.
2-Hold one leg and cut from the joint holding the leg and the rest of the chicken carcass together. A little pressure and cutting correctly at the joint is all you need to know. Repeat the same for the other leg.
3-Now come the chicken wings. Like I mentioned before it is all about knowing the anatomy of the chicken. Cut at the joint that holds the chicken wing and the rest of the chicken together. Repeat the same for the other wing.
4-You are now left with the breast portion of the chicken. There is a bone that runs right through the center of the chicken breast dividing it into two halves. Run the knife along the center and cut deep to carve out the meat from one side. You would be able to feel the bone as you carve out the flesh. Repeat the same for the other chicken breast. You can now cut the chicken breast into slices for serving.
5-With what remains on the carcass you could make a comforting delicious chicken soup.
Toss up a nice green salad, the soup and the carved roasted chicken; a healthy nutritious spread ready for your dinner.

There are only four actual types of tea that are made from true tea leaves, and these are: green, white, black or red and oolong. However, there are many variations that people through the years have come up with in order to add some variety to the tea menu.
For instance, people have been known to make up their own herbal teas from tree or bush leaves which are actually of no relation at all to the one true tea tree, which is that of the camellia sinensis. One variation in particular is that of cocoa tea, which is discussed here in this article.
Where did Cocoa Tea Come From?
Cocoa tea is a regional delight which originated from and was first made popular in Soufriere St. Lucia, in the West Indies in the Caribbean. Cocoa tea quickly came to be in a time when a single meal might have been made up of a drink and some accompanying, more filling parts.
This drink was thus created to fit such a need. Soufriere St. Lucia citizens, at the time of cocoa tea’’s creation, basically needed to find or create foods which were economical, efficient and which could be made to feed each member of their family properly. Cocoa tea was thus basically invented as a breakfast treat that fit this bill.
What Exactly is Cocoa Tea?
Cocoa tea is really not a tea at all and in fact does not even contain any tea at all. It is referred to as a tea however because a bay leaf and cinnamon stick are steeped in boiling water in the same way which one would steep actual tea leaves in order to make regular tea.
In addition to the traditionally used cinnamon and bay leaves, the traditional cocoa tea recipe also includes that of milk or cream, as well as water, sugar, vanilla, nutmeg and cornstarch. Today, cocoa tea might be served with a side of bread. In older times, however, flour dumplings were boiled within the drink in order to make it a complete meal.
So as one can see, cocoa tea is not really a tea, not even really in the loosest sense. Nor is cocoa tea even considered as a meal in a beverage like the locals claimed it first started as. Cocoa tea, although still served as a breakfast meal, could easily be treated as a dessert treat or even possibly an enjoyable snack. Most vegetables are best for you, nutritionally speaking, when eaten raw. That’’s not to say that you should avoid cooked veggies, far from it. But rather than boiling them until they”re mush which causes the vegetables to lose a lot of nutrients, try lightly steaming them to preserve not only the nutrient content, but also the taste.
If you”re anything like me, you”ve probably wondered from time to time exactly which vegetables are the most nutritious. Well wonder no more! Here is a list of the most nutritious vegetables.
Any green leafy vegetable like arugula, spinach, kale and swiss chard is chock full of Vitamins A, B6, C and K. They also contain lots of fiber and minerals like calcium, folic acid, iron and potassium, magnesium and manganese. So what are you waiting for? Add a handful of raw spinach and kale to your next tossed salad.
Broccoli - Just 50g of raw, uncooked broccoli contains over 75% of an adult’’s daily requirement of Vitamin C. It’’s also rich in Vitamin A. Broccoli and some homemade low fat dip makes a terrific evening snack that’’s oh so good for you.

Red peppers - If you”re lacking Vitamin C, then red peppers are the vegetable for you. You”ll get one and half times the daily recommended intake in just half a cup of raw red peppers. They”re also high in Vitamins A and K. Besides which they taste great and have a satisfying crunch factor.
Sweet potatoes - The King of Vitamin A, 1 medium sized cooked sweet potato packs a whopping four times the daily recommended intake, in addition to Vitamins C, B6, dietary fiber, potassium and manganese.
Tomatoes - Adding just one medium sized red tomato will supply you with 25% of your daily required amount of Vitamin C, 20% of your vitamin A requirements and 12% of your Vitamin K. they”re also a good source of potassium and manganese.
Green peas - One half cup of raw green peas are packed with dietary fiber, Vitamin C, thiamine, folate, Vitamin A, Vitamin K, and manganese.
Carrots - The Queen of Vitamin A, half a cup of raw carrots will give you more than twice the daily recommended dose. Carrots are also a good source of Vitamin K.
Vegetables that you grown yourself and can eat within minutes after picking are best for you, particularly if you garden organically. Store bought organic veggies are preferable to commercially grown vegetables. And any commercially grown produce should be washed thoroughly before consuming. Bon appetite!

Each way of eating has its own advantages and disadvantages, however, if I can choose, I would like to eat my own food at home.
More and more restaurants are rising day by day to fulfill the customer’’s needs. A large amount of businessmen or officials resort to restaurants as they have no time to prepare food and cook at home. Therefore, they can save much of their precious time and energy by going to a restaurant.
However, a hot issue has been debated lately especially in Vietnam is about food safety.
It is undeniable that all the food served at the restaurants is cooked from safe product with 100 percent guarantee. No one is sure about the origin of the food; he cannot confirm surely that the cook made the dishes carefully and safely enough or not. Another disadvantage of eating out is that the restaurant is a noisy place to enjoy the food. Even sometimes, the others next to our table annoy us with noise and this nuisance breaks our appetite. Moreover, eating out definitely cost more expensive than eating at home. Eating out so much causes the wrong conception in some people’’s thought. They think that their eating out shows their high position or upper strata in society.
I myself would like to have meals at home with some following reasons:
First of all, eating home is a way to keep fit and stay healthy. Going to the super market to buy safe food then cook it at home is the best option for anybody. Especially when a member of your family has a disease, he is not allowed to eat some kinds of food, no cook at restaurants knows exactly about his menu but his family. In addition, we buy fresh food everyday to make sure the meal provides enough vitamins and nutrition so that we are energetic to work and study. When we make sure the home made food is safe and delicious, it is obvious that we enjoy the meal without reservations.
Second of all, eating together with the whole family at home seems to be a good custom in our culture. Each dinnertime is when all family members gather around, enjoy the meal and share their feelings. Everyone is busy with lessons or work at daytime and eating time is when parents ask about the children’’s day at school, and vice versa. In this modern life, many urban dwellers miss their meals at home to go out with friends at the restaurants. They want to try new food at different restaurants or to have more time for friends. Gradually, eating out becomes a habit and it makes people lose sense of family’’s value. Therefore, eating at home seems to be an indispensable activity of many families everyday.

Red Lobster Cajun Shrimp Linguine
Ingredients: 1 pound linguine, 1/2 cup chopped flat leaf parsley, salt, ground black pepper, 2 tablespoon olive oil, 2 tablespoon butter, 1 chopped white onion, 4 cloves of finely chopped garlic, 1 pound - about 25 - shrimp (shelled and deveined, tails off), 1/2 teaspoon of dried, crushed thyme, 1/4 teaspoon red pepper flakes, 1/8 teaspoon cayenne, 1/2 cup heavy cream, 2 tablespoon tomato paste, sugar, lemon juice
Recipe serves 4 people. Make necessary adjustments for larger quantities.
1. Place the shrimp in small mixing bowl. Dust shrimp with cayenne, salt, pepper and thyme. Toss and let sit.
2. Boil pasta in large pot of salted water until al dente. Drain the pasta, reserving some of the pasta water.
3. While the pasta is boiling, melt butter in a separate pan with olive oil over medium to medium high heat.
4. Saute onion until soft, 3-4 minutes.
5. Add chopped garlic and red pepper flakes. Stir for 30 seconds and do not let the garlic burn.
6. Add tomato paste, heavy cream and a small pinch of sugar. Stir ingredients and continue to cook until blended.
7. Add shrimp and cook 2 minutes.
8. Add pasta and toss, reserved pasta water may be added to moisten if necessary.
9. Allow the shrimp to finish cooking, another 1 to 2 minutes. Do not overcook. Add parsley. Season to taste with additional salt and pepper, if desired. Remove from heat, squeeze lemon juice over pasta and serve.
