Different Flavors For Making Wine at Home

When you are making wine in your home, be aware of the different flavors that you can do. You don”t have to do a wine based on grapes if you don”t want to. There are many fruits you can do wine with besides grapes. Lets look at some recipes to show you what I mean.

Homemade Blueberry Wine

2 1/2 pounds of a variety of blueberries
1 pound of raisins
1 1/2 teaspoon of acid blend
1/2 teaspoon of pectic enzyme
2 pounds of granulated sugar
1 gallon of water
1/2 teaspoon of yeast energizer
1 crushed tablet of Campden
Yeast but make sure it is for wine not bread

Measure the water into a large pot and heat it until it boils. As the water is heating wash the blueberries and crush them. You just need to break the berries open enough that the wine yeast can begin the process of fermentation. Put the crushed blueberries in a primary fermentation container that is 7 to 10 gallons in size. Add the sugar, raisins, acid blend, enzyme, yeast energizer, and the Campden tablet. Pour in the boiling water and mix until the sugar is dissolved. Then let the liquid cool to about 70 degrees Fahrenheit. Then mix in the yeast and place a cloth lightly over the top to cover it. Stir it everyday for 7 days. Strain this mixture and place into the secondary container for fermentation. At this stage glass containers are recommended so that you can observe the wine”s clarity. Wait three weeks and then rack the wine and then do it again at 2 months. When the wine becomes clear then rack it again. Then it is time to bottle the wine and let this wine age for a minimum of one year and then you can drink it.

Another wine flavor when making wine could be orange like the recipe below:

Orange Flavored Wine

10 pounds of oranges that are extremely ripe (Valencia or Navels are most used)
2 gallons of water
6 pounds of granulated sugar
2 teaspoons of the yeast nutrient
1/2 teaspoon of grape tannin
1 ounce of the yeast designed for wine

Bring the water to a boil in a large pot. Peel all of the oranges being careful to remove all the white pith. Cut oranges into pieces and make sure there are no seeds. Liquefy the orange slices in the blender. Pour the orange mixture tannin, sugar, along with the yeast nutrient into your primary fermentation container. Pour the boiling water into the mixture and mix until you see that the sugar is completely dissolved. Cover this mixture and let it cool to room temperature. Then add the yeast and recover and let it ferment for 7 days. Then using a mesh bag strain the orange mixture and place it in a glass secondary container to continue to ferment.

Make sure this container is sealed tightly to keep any air out and rack the mixture once every 30 days for a period of 4 months. Let it stabilize and in about a week then rack it and bottle it. This wine needs one year of aging.

Following A Raw Food Diet In China

Following a raw, or mostly raw, diet in the United States is easy in some ways and difficult in others. On the one hand, fresh produce is available year round because of a highly developed logistical system as well as numerous greenhouse growers. However, it is common knowledge that the U.S. has the highest concentration of overweight and obese people.

Moreover, in the U.S. for many it is almost a sacrilege to refuse to eat meat or cheese. Meat is the staple food in America. So from an interpersonal relationship standpoint, staying raw in America is more difficult that doing so in other countries. I have lived in China for the previous year, and while I am not following a 100% raw food diet, I do follow a mostly raw entirely vegan diet and am constantly seeking to increase my consumption of raw foods and vegetables.

The situation in China is reversed in some ways. I was living in a smaller city in China where access to raw fruits and vegetables declines in the winter. But as most people are likely aware, there are very few overweight Chinese. There are several reasons for this.

For one thing, in China one needs to walk much more than in the U.S. But an even greater influence is their diet which does not include cheese. Bread is also not commonly eaten. Additionally, while Chinese do eat all kinds of meat (including dog, donkey and even cat and rat in some regions), the actual amount of meat consumed is very small. Almost every dish ordered in a restaurant that is labeled as a “meat dish” will be composed of perhaps 10% meat and the rest is vegetables and noodles or rice.

When the weather is not very cold, fruits and vegetables abound. There are more than 20 different varieties of green vegetables that are commonly eaten, many of which I have not even been able to find English words for because I don”t think these vegetables are available in the States.

In the winter, one must be more creative. In southern China, one of the most popular types of restaurants is what is known as “Hot Pot”. This is a large metal pot that is placed in the middle of a table on top of an electric heater. It is filled with a broth which varies from one restaurant to another but is generally very spicy. After you sit down, you mark on the extensive menu the food items you wish to cook in your Hot Pot.

Many kinds of meats, noodles and vegetables are available and they are all raw. Generally for a party of four, you will order at least thirty different menu items. A few minutes after you give the filled out menu to the server, he or she will bring numerous small plates containing your orders.

As stated earlier, everything is raw. Everything is also sliced very finely. As the meal progresses, you dump the contents of each dish into the big pot and wait for them to cook, and then you fish them out with your chopsticks and put on your little plate. Some items, such as potatoes, take up to five minutes to cook. But most, even the meats, are shredded so finely that the cooking time is under one minute.

These restaurants import many quality vegetables even in the winter. Consequently, what I do during these times is simply not cook any or most of the vegetables and merely munch on them raw. This is a simple method which startles most locals, but the Chinese are highly adaptable and curious, and many of my Chinese friends these days eat lots of raw veggies along with me. So the moral of this story is that while being raw in today”s society is never entirely easy, a tiny bit of creativity can aid you in your journey to superior health.

Ordering Beer

Beer is served by the liter or ”Mass”, or by the half-liter or ”Halb”. Ordering quantities smaller than that is generally frowned upon. For non-drinkers, even though sodas and colas are available in some of the beer gardens, a customary drink is ”Apfelschaftschorle”, which is soda-water mixed with apple juice. This is of course not only much healthier but also more refreshing than a cola. And then there is the ”Radler”, which literally means ”cyclist”, and is half-beer, half-lemonade.

Food with Beer

The staple food in beer gardens is large, soft pretzels and sausages of all sorts, usually served with sauerkraut and potatoes. A favorite in Munich is ”Weisswurst” or white sausage, which is traditionally served in the morning, often with sweet Bavarian mustard and beer. Etiquette requires that you eat ”Weisswurst” by hand and leave out the skin. In most of the beer gardens, you are also permitted to bring your own food, although never your own drinks.

The Lowenbraukeller, located adjacent to the brewery at Nymphenburger Strasse 2, (tel. 089-526-021), is quite close to the Hauptbahnhof (main train station) in a rustic locale. It known primarily for its Nurnberger Bratwurst (finger-sized grilled sausages) and traditional Bavarian fare. And this is one establishment where you should stick to beer here and not even think of asking for cola as the latter is genuinely frowned upon here.

The Chinesischer Turm (Chinese Pagoda), located in the Englischer Garten, is the second-largest beer garden in Munich. It has a seating capacity of approximately 6,000 people. Here, you can bring your own food, but, as with other such restaurants, not your own drinks. Several other smaller beer gardens are also scattered through the Englischer Garten.

Easy Cakes to Make at Home

Everyone loves a delicious homemade cake. Many people tend not to make cakes because they think it is a difficult and time consuming task. Fortunately, there are easy cake recipes that are perfect for the novice baker and one who has a busy life.

The following are a few easy cakes to make at home:

1.) Sponge Cake: This cake is very easy to make and is light, tasty, and perfect for the family or when entertaining guests.

Ingredients: 4 oz (110g) self raising flour, sifted, 1 tsp baking powder, 4 oz.(110g) soft margarine, 4 oz (110g) sugar, 2 large eggs, 2-3 drops vanilla

The entire baking time from start to finish takes less than an hour.

2.) Ice Cream Cake: A delicious treat children will love.

Preparation time: 20-30 minutes. Freezing time: 8 hours or overnight.
For one 8 inch ice cream cake you will need: 3 c. chocolate ice cream, slightly softened 5 Heath bars or 5 oz. English toffee, coarsely chopped 4 tbsp. chocolate syrup 3 tbsp. coffee liqueur 3 c. vanilla ice cream, slightly softened

3.) Chocolate Cake: Preparation time takes only a few minutes. The result is moist and delicious chocolate cake.

Ingredients: 4 oz (110g)self raising flour, sifted, 1 tsp baking powder, 4 oz (110g)soft margarine, 4oz (110g)sugar, 2 large eggs, 1 tbs. cocoa powder. Filling ingredients:
2 oz (55g) butter or quality margarine, 4 oz (110g) icing/confectioners” sugar, 1 rounded tbs cocoa powder, 2 tsp of milk.

Preheat the oven to 170 deg C, 325 deg F.
Sift the baking powder and flour into a large mixing bowl. Add the other ingredients to the bowl and beat until everything is mixed together. Put half the mixture in each of the prepared pans and place on the centre shelf of the preheated oven for about thirty minutes.

4.) “Fruity” Cake: A delicious and fruity treat for the whole family

Ingredients: 2 eggs, 1 c. salad oil, 2 c. sugar, 1 tsp. salt, 2 c. flour, 1 tsp. baking soda
2 tsp. cinnamon, ground, 1 tsp. vanilla, 1/2 c. chopped nuts (optional), 1 can pie filling (apple, cherry, peach, etc.)

When mixed, stir in can of fruit with its syrup. Pour into a greased and floured 9 x 13 inch baking pan. Bake at 350 degrees for 35-45 minutes. Cool.

5.) White Birthday Cake: This is an easy and delicious cake for anyone”s birthday.

Ingredients: 2 1/4 cups cake flour (9 ounces), 1 cup whole milk, 6 large egg whites (3/4 cup), 2 teaspoons almond extract, 1 teaspoon vanilla extract, 1 3/4 cups granulated sugar (12 1/4 ounces), 4 teaspoons baking powder, 1 teaspoon table salt, 12 tablespoons softened unsalted butter (1 1/2 sticks)

Preheat oven to 325 degrees and bake for about 25 minutes.
