Salmon is a fish that is rich in omega-3 and protein. It cooks in no time and is easy to tell when it is done. When prepared fully, it can be a very delicious meal. But the background on how to handle salmon are critical to making the ideal fish. The key note is to keep the fish refrigerated until its ready to be cooked.
There are a number of ways to prepare and cook salmon- it can grill be grilled, baked, broiled or poached. Topped with sauces, marinades, and other preparations salmon can offer a very versatile meal. An additional key note is to not overcook, as this may cause the fish to become tough and dry.
If you are going to cook the salmon some days after you have bought it, rinse the fish in cold water and slice the salmon into the appropriate sizes for eating, then place in a freezer bag to prevent freezer burns. The ideal way to thaw salmon is to remove it from the freezer and put it in the refrigerator 24 hours before preparing it so that it thaws on its own. Try to not place the fish under warm or cold water.
Keep the skin on while you cook salmon. It helps keep the fish together and makes it much better to move and also prevents the meat from curling. An characteristic of when the fish is done is when the meat gets “flaky” and changes color; you can test by only embedding a fork into the thickest part of the fillet and twisting it. If the fish flakes easily, it is done.
Broiling is a popular method that is easy and simple. The oven rack should be positioned six inches from the heat. By putting parchment paper on the broiling pan (and subsequently the fish on the parchment paper) the pan will be a lot eaiser to clean once the meal is done.
If you are cooking your salmon whole, allow eight minutes for each half pound of fish. Fillets and steaks should be cooked six minutes for each half inch of thickness. If you are cooking fillets be sure you place the skin down when you cook it.
To grill the salmon, general cooking time for a whole fish is 20 minutes for every half pound. Turn the fish once half way through the cooking process. Grilling salmon steaks or fillets adapts the same timing style to broiling the fish. Cook 5 or 6 minutes for each half inch of thickness at a medium temperature. Try turning the steak or fillets only once.
To poach salmon, pour water into a shallow skillet until it is half full. Bring the water to a boil and combine sliced lemon, onion and fresh herbs for flavor. Reduce the heat to a gentle boil and add the salmon, simmering until it is done. Simmer for 5 minutes for each half inch of thickness.
Ensure leftovers are refrigerated at once.

The laws governing OUI, operating under the influence of drugs/alcohol, in Maine are becoming more and more draconian as time goes by. This is mostly because lawmakers work hard to curb alcohol-related accidents and deaths, and use the law as a means of preventing disaster or repeat offenses. As the laws become more strict, the penalties for violating the laws become more harsh, and the government hopes to use these stricter, harsher penalties to discourage people from driving while impaired by drugs or alcohol, regardless of whether they are over the legal limit.
Changes in 2008 and 2009 to Maine OUI laws have made driving any vehicle, private or commercial, a risky endeavor while impaired by alcohol. Some of these changes include, but are not limited to the following notable amendments/additions:
Addition of IID for license reinstatement. Under the old laws, a driver who had lost his or her license due to an OUI or repeat OUI convictions would have to wait until the court and the Department of Motor Vehicles allowed the license to be reinstated in order to drive legally. Now, the state government will allow for license reinstatement on occasion with the addition of an ignition interlock device. This device works by preventing the vehicle from starting until the driver blows into the machine and passes a breathalyzer test. This amendment only applies to repeat offenses.
The IID will have to be in place for a predetermined period of time before the license is granted under normal terms. The amount of time depends on the number of repeat offenses in a given time period, and any new conviction will cancel the agreement. Additionally, if the driver does not pass the starting test, or attempts to tamper with or remove the IID, the court may decide to revoke the agreement.
Adds or changes reinstatement fees for driver”s license. If a particular district did not have a predetermined reinstatement fee, or this fee was lower than the state-approved amount, changes governing a price modification or addition were added to that area. Reinstatement fees are normally in addition to the common cost of getting a driver”s license, and normally cannot be broken into manageable installments.
Changes to the minimum monetary fine and jail term for repeat offenses. Increases in the minimum monetary penalty and term of imprisonment are expected to lead to fewer repeat offenses. A repeat OUI offense is any second or subsequent OUI offense within a 10-year period in the state of Maine.
The best way to avoid an OUI is obviously to make the decision never to operate under the influence of drugs or alcohol. Law enforcement officials can arrest you for OUI even if you are under the legal limit, if you display other signs of intoxication or impairment. If you have been arrested for OUI, it is important to contact a skilled attorney to discuss your options as soon as possible, and begin building an effective defense early, in order to achieve the best outcome possible for your individual circumstances.

For many moms who are looking to create frugal meals, the thought of buying a whole chicken is intimidating. Just what do you do with the darn thing? Sure, you know how to bake a whole chicken, but what else can you do?
These grocery saving tips can help you create 2-3 budget dinners from just one whole chicken! Soon, this will be the only way you purchase poultry. Here are my top 5 budget dinners to make using a whole chicken.
Find the biggest chicken available in your grocery store to make the meat last the longest and to give you the most budget dinners. My favorite thing to do with a whole chicken is to bake it in a crockpot.
Crockpot Baked Chicken
This is an easy, low energy way to have dinner ready at 6pm. The trick to baking a chicken in the crockpot is setting it up on a quartered onion.
Rub your favorite spices (garlic powder, onion powder, thyme, rosemary, cayenne pepper, salt) on the chicken, and put a few pats of butter under the skin. Then place it on top of a quartered onion in the crockpot. Bake on low for 8 hours.
Once dinner is done, save the leftovers and the carcass! They will come in handy for frugal meals later in the week!
Here are some good grocery saving tips: depending on the size of your whole chicken, you should be able to get at least one, and possibly two more meals out of it. Pull any leftover breast meat off the bird and use it for one of the following three budget recipes.
Chicken Tacos
Heat leftover breast meat in a pan with a couple teaspoons of oil. Once it is warm, add in a taco seasoning mix packet. Serve on tortillas with cheese, lettuce, tomatoes, black olives and sour cream.
Chicken Alfredo
Make a simple Alfredo sauce by starting a roux with a stick of butter and a quarter cup flour. Add in 2 cups of milk slowly, letting sauce thicken. Add in one 8-ounce package of cream cheese, and after melted, 6 oz Parmesan cheese.
Season with pepper, parsley, and a pinch of nutmeg. Add in leftover chicken pieces and serve over fettuccine noodles.
Chicken Casseroles
Leftover meat from a whole chicken is perfect to use in any chicken casserole recipe you have, and make the best frugal meals! If you don”t have a recipe, a good combination is chicken, some sort of vegetable, either rice or a noodle, and a chicken or mushroom soup.
Make sure the noodles or rice are precooked. The secret to a great casserole is to just undercook the pasta or rice, so that when you bake it, it gets completely done. Bake casserole at 350 for 20-30 minutes. The last 5-10 minutes of cooking, add a topping of some sort to your casserole.
The favorite toppings in this house are shredded cheese or fried onion rings. I like to crush up the onion rings when they are going on top.
Chicken Soup
If there is still a little meat on the chicken carcass, you can stretch your money a little further and prepare a chicken noodle soup. Soups are excellent budget dinners. Put the whole carcass back into the crockpot, add a splash of vinegar, and let cook on low overnight.
In the morning, strain the bones out, but make sure you keep the broth! Let the chicken cool for a couple hours and then go through the pile of bones and peel off the pieces of chicken. Put them back into the broth along with some chopped up celery and carrots, and allow to cook in the crockpot on low until dinner.
You can add in a package of egg noodles about a half-hour before serving. A nice salad and a loaf of french bread go perfectly!

First, it is mildly sedative, which aids in relaxation. Second, it eases digestive issues, which can also interfere with getting rest. Third, it relieves pain and inflammation, another common culprit of sleep issues.

Valerian can be used as a tea, tincture or bath. To make tea, add two teaspoons of valerian root to two cups of warm water and allow to sit through the day. Strain and add one teaspoon of honey to the tea. Drink one cup after supper and another before bed.
Some people choose to add other sleep herbs to their tea such as hops, lemon balm, chamomile or lavender for better results. Tinctures can be purchased wherever herbal remedies are sold. On average, twenty drops in a glass of water drank before bed is effective. However, due to the differences between individuals, you may require a little more or less to get optimal results.
For a bath, pour one liter of boiling water over a couple handfuls of dried valerian root. Let sit twenty-five minutes before straining and adding to a warm bath.
Passion flower is another of the sleep herbs that has multiple methods of use. As a tincture, add thirty to sixty drops to a glass of water and drink forty-five minutes before bed. As an infusion, steep one ounce of herb in one pint of boiling water for twenty minutes before straining to drink.
