Meeting with Professional Wine Cellar Designer
After having all these concepts in his mind, the LA wine collector
discussed his plan with the wine cellar designer . In addition to his own preferences, he presented more information such as the exact room area which is 182″ x 210″ with a height of 126″ that would accommodate his 3816 bottle collection. The sizes of his collection range from .375 ml, 750 ml, 1.5 magnum, and his oversized champagne bottles.
Upon presenting his plan of a custom wine cellar, the CAD team of the LA wine cellar designer commenced their work of making the 3 dimensional design that would accommodate his wine requirement needs with all the specifications he wanted.
The wine cellar designer guided the Los Angeles wine collector in choosing the best wood material for his cellar, the lighting fixtures, the door and flooring needs, and the cooling system to use for his large wine room.
The planning stage commenced in 2009 and, after having made four changes to the original design, the project was approved by the wine collector and cellar production started last July 2010.
Bringing the Design to Life
Heart Redwood was used for making the racks because of its high quality. Aside from being lightweight and low flammable, it is also noted for being resistant to insect and decay. It was painted with a lacquer finish to protect it from spills.
The racks were a combination of single deep racks above the counter and double deep storage below it to maximize the storage capacity of the room. The custom wine cellar designers incorporated various kinds of wine racks to hold split bottles, the .375 ml. and 750 ml. bottles, 1.5 magnum wine bottles and even over sized champagne bottles. It also has room for wood case storage at the lower portion of the racks.
The Los Angeles wine cellar also had tilted and vertical display wine racks as well as lots of counter top space. Because of the high storage space, all racks are resting on a 4″ base against the 1.5″ standard for better appearance.
From the back wall to the center of the room facing the door, they created a cascading water fall wine rack that ends at a granite table top. Because of its beautiful presentation, this is one of the main attractions to the wine room. The waterfall wine rack was further accentuated by the 36″ arched door on a dual paned glass equipped with a wrought iron grill with sidelights and transom.
The counter is another added dimension to the cellar. It measures 40″ high and is also made of Heart Redwood with its table top material sealed to protect against spills. There is also a support rail to hold the high racks in place and to accommodate the tracks for the rolling ladder and the brackets.
What added more functionality to the large wine room is the rolling ladder. For convenience in the moving wines in and out of his 10 foot high wine cellar, the provision of an 8 foot rolling ladder was used to access his collection at the upper portion of the high wine racks which extend to the top of the room.
The most important part of any wine cellar is the wine cooling system because it regulates the temperature and humidity in the cellar. Different sizes and types of wine cellars require different cooling systems.
The Los Angeles wine cellar used a ductless split refrigeration system. This type of system can be used in residential or commercial wine cellars and is built to cool large spaces such as the Los Angeles custom wine cellar.
The fan coils were covered so as to hide the mechanical aspects thereby giving the room a smooth finish. The cooling system was clad in a wooden grill box and louvered vent cover that matched the wood material used in the wine rack making.

The phrase “binge drinking” has become very much part of modern society in the UK. But it has many different connotations. At the very best it is seen as social drinking where the drinker has the sole intention of using drink to become intoxicated and have a good time. At worst it is hazardous and abusive drinking which tends to destroy lives and leads to alcohol treatment clinics.
Binge Drinking has become a culture for young people between the ages 18 and 25. It is a frightening fact that about two-thirds of men aged 20-24 and one-third of women aged 16-19 are classed as hazardous drinkers. For most young people getting drunk or a little bit tipsy at a party every now and again, it is just part of a fun night out. It is when that pattern of drinking occurs regularly at all social events that it becomes a danger. And it is not just young people who binge drink.
All ages, all classes, and all genders of people binge drink, and it is not always social events where it happens. It often grows out of learnt patterns of behaviour and arises as a way of dealing or confronting certain issues in life. For instance, someone who finds it difficult to relax, may use alcohol to bring themselves down; someone who finds it difficult to deal with stressful situations may use alcohol to self-medicate. Worries and concerns are quickly forgotten during a session of “Binge drinking” but as any member of alcoholics anonymous, or counsellor from an alcohol clinic will tell you those problems are still there once the hangover has gone.
Binge drinking effects people in different ways and it is often the more subtle issues that we do not take into account until it is too late. Warning signs occur a long time before an addict finds themselves in an alcohol treatment clinic. One thing alcohol abuse does, whether you are an addict or not, is affect how you function and interact with the environment. Many young people do not realise however that alcohol can have a long term damaging effect on your brain if it is taken in excess regularly while you are still growing and maturing. This is one of the reasons for the strong laws around alcohol and children in this country.
Alcohol affects the part of your brain which deals with impulse control. Your reaction times are slowed and your judgement blurred. This makes dealing with machinery dangerous. Behaviour becomes unpredictable and uncharacteristic. It is another astonishing statistic that nearly everyone who ends up in accident and emergency with facial injuries is there because either they, or the person who assaulted them, had been drinking. One estimate puts figures for this type of injury these at 125,000 per year. Glasses and bottles are the most common cause of serious injury.
The four areas where we are affected most when drinking in excess are:
Concentration
Unwanted aggression/accidents
Unwanted sexual situations or not being able to function sexually
Health problems arising from alcohol abuse
One of the big problems with the drink culture in the UK (and possibly a great deal of other countries as well) is it is seen as having street credibility to be able to “hold your drink” What young people are actually seeing in their friends is a tolerance to the alcohol. This is very dangerous as the more someone becomes tolerant to the effects of alcohol, the more they need to drink to enjoy its effects. This is the start of a downhill slide.
Statistics have also shown if you drink before the age of 14 you are approximately four times more likely to become dependant upon alcohol and need the services of an alcohol treatment clinic
Alcohol does have its good side. When taken in moderate amounts (one glass of wine with a meal) it can help to protect against heart disease. However keeping a check on the amount of alcohol you take in within a week is a good idea. Sometimes when it is so much part of your social world, and because we are becoming tolerant to its effects, we loose track of the amounts we are drinking.
The government has set the following as safe limits:
Men – up to four units a day (about two pints of ordinary strength beer) to a maximum of 21 units a week
Women – up to three units a day (two small glasses of wine) to a maximum of 14 units a week
It is not a good idea to drink this much all the time. In fact, most experts advise at least two alcohol-free days a week. It”s also good to have at least two days off the booze after a big night out to give your body a chance to recover.

Buttery peanut brittle is a treat that most people enjoy. It is something that is quick and easy to make. The main ingredients that you are required in order to make this treat are corn syrup, sugar, peanuts and water. The ingredients have to be mixed together and then boiled at a precise temperature. Butter and baking soda are then added before the entire mixture is spread onto a baking sheet where it will cool off.
There are a few techniques that one can follow in order to make the perfect peanut brittle. Firstly, try to avoid making the snack on days where the humidity is very high. High humidity makes the snack sticky and it will not set properly. The perfect time to prepare the treat is when the humidity is less than 35 percent.
There are some areas where the humidity is constantly high. If you live in such an area it is best to make use of a humidifier every time you want to make the snack. Keeping the kitchen air conditioned will also help. When it comes to the peanuts, try to make use of raw blanched ones. Raw nuts are nuttier in flavor than roasted nuts.
The best types of nuts are the raw Spanish nuts which have red and papery skins. However, if you have roasted nuts only, make sure that they are only added towards the end of the cooking time. America has a huge selection of tasty sweets that are making their way across the pond to the UK and Europe. The UK has some delicious confectionery choices but many Brits are looking to America because they have such a diverse range of candy.
Everyone enjoys a bit of reminiscing about their favourite childhood sweets, especially the types that aren”t in production any more. Let”s take a peek at some of our favourite childhood American sweets, the typical UK dweller may not have heard of these but the die-hard sweet lovers will probably know about these transatlantic goodies.
A nostalgic childhood candy is the Boston Baked Bean – not your typical savoury style baked bean – but a peanut covered in a sugary candy coating. The sugar-coated delights were originally made by the Ferrara Pan Company in the 1930s and were popular among Americans in the 50s and 60s. The candy bean was created using a panning process founded in France in the 17th century, panning is also used to make M&Ms and Mini Eggs (think of their hard, sugar-coated shells). These candy-covered beans are extremely addictive, you”ve been warned!
Another tasty American treat is the Twizzler, made by the American chocolate icon Hershey”s. The company was founded by Milton S. Hershey in 1894 and is one of the oldest and most popular chocolate companies in America. Twizzler”s are described as, ”licorice sweets with a twist” and recently they have developed new styles and flavours for the Twizzler. As well as black licorice, you can choose from strawberry Twizzlers, cherry and watermelon. The newest addition to the Twizzler empire is the Sweet and Sour filled Twist which has a luscious gooey, fruity filling. Twizzlers also come in little bite-sized Nibs and Bites.
Another childhood sweet is the Laffy Taffy chewy sweet collection, the sweets are manufactured by Nestle but sold under their Willy Wonka brand (think Nerds and Willy Wonka chocolate). The individually-wrapped sweets are named Laffy Taffy because each wrapper contains a silly joke (Laffy) and Taffy describes the texture (toffee-like). The jokes on the wrappers were submitted by children, who got credited for their funny efforts. Laffy Taffy originally came in thick, square-shaped pieces but is now sold in thinner, rectangular pieces bursting with a long-lasting fruity flavour.
Wonka Nerds are sold within the UK but the hard candy sweets originated in America and were launched in 1983. Nerds are sold in a box with two separate flavours and each side of the box can be opened separately from each flavour. Nerds are made using the panning method (as with Boston Baked Beans) whereby a small sugar crystal is coated with sour sugary layers until the sweet is the right size. In addition to the usual two flavours in a box of Nerds, there are also Rainbow Nerds – a large box of colourful Nerds mixed together. The Wonka company also produce Nerd jelly beans around Easter and Nerd bubblegum all year round.
The US is definitely the leader in the sweet/candy market and luckily, all of the above goodies are available and sold in the UK – whether it be in large department stores or specialised American food shops.

Dating back as far as 589 BC sausages were mentioned using goat, and lamb meat, and the Greeks mentions sausages often.
Fresh sausages can be made easily by mixing ground meat with different hers to create amazing flavors. The taste you want to create will often determine what meat, spices, and flavoring is added. Although beef and pork are very common today, there are no real restrictions as to what meat is used. At one time, the sausages would have been made with the animals that were present in the local area, and that were easy to catch.
Salmon and rabbit are two very popular ingredients for sausages. Although it would depend where you were in the country both of these can be found easily, and used as vital ingredients. Goat, lamb, venison, and reindeer have also all been known to be placed into sausages to give them a distinctive and full flavor. The classification of the sausage will depend on where in the world you are, and there are a huge number of variations available.
The art of sausage making has traveled through time, and today the procedure is a mix of old, and new methods. The basic method of stuffing casings with meat, and spices is the same as it was once thousands of years ago. However, sausage recipes have been refined to ensure that only the best ingredients are chosen for the sausages. The meat that is chosen needs to be fresh and top quality as the sausage is only as good as the ingredients that are placed inside.
The meat to fat ratio needs to be perfect to help create the best sausages possible, and the spices, and herbs should be perfect, and not over powering.
