When your coffee has fair trade certification, it guarantees just prices and ethical buying. It prevents child labor, encourages conservation and protection of the environment and ensures a just price to cover production costs. Other trading principles adhered to include a safe workplace, the right to form unions and abiding by the United Nations human rights charter. There are many products besides coffee with fair trade certification including honey, cotton, rice, spices, banana, cocoa and wine.

Fair trade is important because almost 75 percent of coffee is grown by farmers on small plots of 25 acres or less. Local farmers do not have access to resources to compete in a major market against large corporations. As a result, many coffee farmers were having a difficult time realizing profits. Fair Trade standards gives local farmers a better opportunity to profit from their enterprises. Working conditions and morale are improved resulting in better bean production.

The mission and scope of Fair trade certified coffee is to support a better life for farming families in the fast growing world through direct trade, fair prices, environmental stewardship and community development. Fair Trade certified began with Max Havelaar in the Netherlands in 1970.

German Fair Trade labeling organizations make international deals with more than 20 national branches throughout the whole world. Even though green tea may be beneficial during colon cleansing, there is not enough evidence to show that it is useful in the process of elimination. There are other kinds of herbal teas that contain several herbs that are widely understood to help during the process of body detox.

There is an herbal detox tea called Ten chi cha. The tea”s main herbal ingredient Dokudami is recognized for removing free radicals caused by processed foods and pollution. Football Tailgate Menu: Crushed and Stuffed Colt Cutlets

The Colts without Peyton Manning are pretty much the Cleveland Browns. The Green Bay Packers should have no problem crushing and stuffing them. And that”s the theme for today”s tailgate menu. Don”t worry no horses will be harmed during the cooking process. Pork will be substituted. Speaking of which, yes Matt Flynn is a good substitute for Aaron Rogers if it comes to that.

Breaded pork tenderloin is one of the few regional dishes that belongs to Indiana. Here, instead of plain white bread crumbs, sourdough bread will be used kicked up a notch with parsley, sage and rosemary. Accompany the crusty pork cutlets with a macaroni salad, cucumbers and onions in sour cream and nutty popcorn sundaes for dessert in honor of Orville Redenbacher, who started his company in Indiana.

Lay the thin-cut pork chops on a cutting board. Remove any bone and excess fat. Place on a sheet and waxed paper. Cover with another sheet of wax paper and pound away. Since the thin cutlets cook quickly this activity is great to do during the game if it gets close, which it won”t.

When the pork chops are twice as big as when you started put them aside for moment.

Mix 1/4 cup cream cheese, 1/4 cup goat cheese, 1/2 tsp. each chopped parsley, sage and rosemary. Throw in 1 tbsp. of chopped walnuts for crunch. Mix well.

Put about 2 tbsp. of the stuffing in the middle on each cutlet. Fold the cutlet around the stuffing as if you were making a burrito or egg roll. Fasten with toothpicks. None of the filling should be showing.

Dust the little stuffed colt cutlets with flour. Dip in beaten egg and then in breadcrumbs. The easiest way to make bread crumbs is in the blender. Cut the loaf in 1 inch cubes until you have 2 cups. Add 1 tsp. each parsley, sage and rosemary. Hit the puree button, which is what the Green Bay Defense is going to do to the Colts offense.

Roll the cutlets in the bread crumbs until well-coated. Add 2 tbsp. olive oil to a saute pan. Place over medium heat. Brown the cutlets on all sides lower to low and finish cooking, probably no more than 10 minutes. The cutlets are tender from all the pounding and crusty on the outside. The stuffing is hot and creamy with a fresh herbal note and a bit of tang from the goat cheese. If you don”t like goat cheese use another soft cheese.

The macaroni salad is easy. Use store bought. Thinly slice one onion and two large cucumbers. Add 1 tbsp. of apple cider vinegar and 1/4 cup sour cream. Salads are done.

The sundaes are best made at the last minute. Top a generous serving of vanilla ice cream with freshly popped corn. If it”s hot from the popper so much the better. Drizzle caramel sauce over the popcorn and ice cream Throw in a few salted peanuts if you like.

Four Star Valentine\’s Dinner Experience For $25

I heard the local news cast recently that people are spending more money on Valentine”s Day this year. That was a little surprising news given all the people still looking for work. But then the news report really blew me away. The news report said that men will spend an average of $159 on the holiday while women spend $76! I can”t picture spending that much myself, can you?

In honor of Valentine”s Day, we offer a chicken marsala dinner idea for you and your Valentine to experience at a four star level which adds up to a total cost of about $25.

Chicken Marsala Valentine”s Dinner
What to Buy
2 skinless chicken breasts ($3.00 per pound)
6 mushrooms, sliced ($1)
375ml bottle marsala cooking wine ($4)
1 can low sodium, low fat chicken broth ($0.50)
flavored pasta packet ($1)
lettuce, cucumber and tomato salad (less than $4)
bottle of wine (about $9)
4 piece chocolate sampler in heart shaped box ($2)
any flower like rose or carnation ($1)

Other Ingredients Needed:
Salt, Pepper, Flour, Sage

Easy Cooking Instructions
Rinse the chicken and pound flat. Mix flour, salt, pepper and sage together in bowl. Dip chicken lightly in flour and seasoning mix. Cook chicken in butter or margarine coated pan over medium heat about 3 minutes per side. In a separate pot, prepare the pasta packet. Remove chicken. Add 1 cup Marsala wine, 1 cup broth and sliced mushrooms to pan and bring to boil. Scrape pan to release bits of chicken into sauce while cooking. Boil for 8 minutes and then add chicken back into sauce and continue cooking until about 1/2 cup sauce remains in pan. Plate chicken and drizzle sauce and mushrooms over top and serve. The chopped salad is easy enough to round out a balanced meal.

Four Star Atmosphere
Now create the four star atmosphere. Light a few candles, put a single flower in water on the table and put on some nice music. Before dinner, take time to make a hand made card with a personal note and place that at your Valentine”s place setting. Keep the chocolate sampler close by as another surprise when it is time for dessert. Within twenty minutes you can serve a classy dinner, including dessert for about $25 or less.

- The bar: While typical budget mindsets may say to stick to beer and wine to stock the bar, this isn”t always true. A bottle of wine can only be split four or five ways and a bottle of beer can”t be split. Having a theme such as “margarita-ville” can keep it simple and everyone happily imbibing who chooses to. - The appetizers: Having a lovely spread of seasonal veggies and crackers or chips to dip into an array of dips is cost effective, relatively healthy and beautiful. It cuts down on preparation time for the chefs so can save money per guest. Having a waiter walk around with a serving tray of delectable goodies can be a good way of monitoring how much each person eats, too. It looks quite elegant to have a suited up waiter offering tidbits and guests won”t likely take a mountain of them in the name of politeness. At a buffet spread, this may not be the case.

- Main dish: A host or hostess doesn”t have to serve filet minion for the main dish to create a splashy meal. Having an aromatic BBQ can be a wonderful treat for all the hungry partiers. Serving chicken in an imaginative way such as in puff pastry with sauces and mushrooms can be downright elegant but nowhere near as expensive as some pricier cuts of meat. Having just one choice rather than multiple entree selections will also cut down the cost without appearing chintzy.

- Side dishes: Although pastas and potatoes are fairly expensive, they don”t have to appear cheap if they are set up on stations where guests can be creative. A potato bar complete with shredded cheese, sour cream, bacon bits, chopped green onions and some other fanciful garnishes will be a surefire hit. Pastas can be ready to douse with sauces, cheeses and freshly ground pepper. Yum!

When a host or hostess plans a special event but doesn”t want to go deeply into debt or wipe out their savings account, there are ways to achieve success. Inexpensive catering can still be done without compromising quality or ambience. All it takes is a bit of creativity and a talented chef to compile the right bar selections, appetizers, main dishes and sides.

Make A Pit BBQ Smoker In Your Backyard

Pork ribs, crispy on the outside, succulent on the inside with a smoky flavor infused throughout doesn”t have to only come from a restaurant. Smoking meat at home is possible even if you don”t have the latest and greatest smoker. Use the techniques of lobster bakes at the beach combined with pit BBQ. Build a homemade smoker pit on Saturday and enjoy home-smoked meats on Sunday.

Building The Pit
Dig a hole in a secluded area of the yard that doesn”t get much traffic. The hole should be 3×3 feet and 2-feet deep. Surround the hole with upright posts, fencing, or big rocks on three sides so people are aware it”s there. The barrier doesn”t have to be tall; 18 inches will be fine.
Put a 6-inch layer of sand in the bottom of the pit and level it.

Stack the cement blocks in the pit. Stack them two high — total height will be 16 inches — in a rectangle shape that measures on the exterior of the blocks 24×16 inches. Stack the blocks directly on top of each other. You will need 20 blocks, six for each 24-inch long side and four for each of the 16-inch long sides.

There should be a gap on all four sides of the cement blocks to the wall of the pit. The gap on the 24-inch long side of the blocks to the wall of the pit will be 6 inches. The gap on the 16-inch long side will be 10 inches. Think of it as a rectangle inside a square. Since the stack is only two blocks high or 16 inches, it doesn”t matter whether you use solid cement blocks or the ones with holes.

Cut a piece of wire mesh that is 26×18 inches. Lay the mesh over the cement blocks. Place a brick on each corner of the mesh to hold it in place. This mesh will support the cooking grid.

Smoking the Meat
Remove the mesh and place a roasting pan with 4 inches of water on the sand in the center of the cement rectangle. Replace the mesh.

Build a fire in the pit on the outside of the cement blocks in the 10 inch gaps between the blocks and the dirt sides of the pit. Use charcoal briquettes, natural charcoal or wood. There is no fire in the middle of the pit because that”s where the pan of water is. Wait for the fire to burn down or the charcoal to be covered with gray ash. Put the meat on a grill cooking grid and then place the cooking grid on the mesh.

Add wood chunks on top of the burnt down wood or charcoal. If the chunks start to flame, spray with water until the flame goes out. Watch for a few minutes to make sure they don”t flare up again. If they do, spray again.

Soak the next batch of wood in water for 15 minutes first.
Place the large piece of mesh on top of the smoking pit and cover it with aluminum foil held down with rocks. The foil traps the smoke inside the pit.

Is Wine Acutally Healthy?

Wine has been said to do a lot of many miraculous things: stop aging, cure bad blood pressure, and make you more beautiful. These things are not entirely true; it is not a magic potion.

But there are some health benefactors in wine that are unique to wine and that you will not get anywhere else, unless you buy the supplement from a pharmacy. The little anti-oxidant that is causing all the commotion these days is called resveratrol.

This resveratrol has been show on a lot of different health programs. But I think they have left out a lot of important information as to how this is affecting your body.

Resveratrol will do a lot of things for your body; it will give your blood an extra little boost to help get oxygen to different organs and tissues. This is great for fighting the effects of aging such as wrinkly skin and organ functioning.

But it also has some rather negative impacts too. It is said to cause joint pain and tender tendons.

The key with resveratrol is moderation, just like is with everything else. They best way to stay healthy is to get a wide variety of healthy and nutritious meals.

When resveratrol is in the blood, and the blood is more flow-able because of the alcohol that thins it, the anti-oxidant and the alcohol work synergistically together to maximize blood benefits. So it does have some good qualities to it.

But on the other hand, studies have shown alcohol to have a vast array of mal-beneficial effects on the brain, liver and over all wellness. What happens is alcohol is made from rotten fruits, sugars, and vegetables through a process called fermentation.

What happens is the yeast in a specific substance will start to create new bacteria, which are toxic but not immediately fatal. Although there have been many cases of alcohol poisoning.

Drinking wine is kind of like an oxy-moron. In the sense that all the things you are doing to help your body you are simultaneously undoing by all the bad affects.

Studies have shown one glass of wine to be the most beneficial amount for men and women. Any more than that the alcohol starts to have negative effects on brain functioning.

So it is really up in the air still whether or not wine is a good or bad thing. As for right now the only thing that can be agreed upon is, one glass a day will not hurt you.

But if you are looking for healthy drinks, there are plenty of drinks that are good for you without alcohol that could be tried. Since it”s often hard for people to have just one glass of wine, I give it as my opinion to stay away from it to avoid any possible addiction. The choice of whether or not to drink it, however, is up to you.
