Rolled Greek Cheese Pie with Homemade Phyllo

Rolled up Greek pies constitute a type of pies you probably wont find at any Greek restaurant. This type of Greek cheese pie is usually made by expert cooks because it is a pie recipe that requires a certain amount of skill.

As you probably know there are many different kinds of Greek pies this is perhaps one of the most tasty ones. This recipe is perhaps one of the easiest of its kind. It is a good rolled up Greek pie recipe that can be made by a beginner cook.

The ingredients you will need to prepare this pie are 1 �½ kg of flour, a bit of salt and water. These ingredients will be used to prepare the phyllo dough. Then you will need to gather the ingredients for the filling. These should be 1 kg of crumbled feta cheese, half a cup of oil and half a cup of vegetable butter.

You can get started right after you collect all the ingredients. The first thing you need to do is to get started with the dough. In a big bowl knead the flour with some salt and water until the dough softens up.

Then leave the dough to rest for about 1 hour. Afterwards, separate the dough into 4 equal sized balls and by using the rolling pin open up one by one the phyllo pieces on a floured surface, giving them a round shape. Melt in the heated oil the vegetable butter and spread it on the phyllo pieces.

Place on a big table a clean tablecloth (dimensions of 1,5X1,5). Then, place a phyllo piece on the tablecloth, and by using your hands pull it carefully from all sides so it stretches and covers the whole table (be careful the phyllo piece does not rip). It would be helpful if a second person helped with this procedure in order to make the phyllo pieces as thin as possible.

Once you have opened up the phyllo piece, cover it with the crumbled feta on its entire surface. Afterwards, roll up the phyllo by using your hands once or twice only from one side (so you create a spiral). Then, lift the tablecloth to an almost vertical position and leave the phyllo to roll itself.

Place the phyllo roll circle wise on an oiled up pan and repeat the same procedure with the rest of the phyllo pieces. Then by using a brush oil up the pie and bake it in a medially heated oven for about 45 minutes.
